To our canned tuna, we add just a few simple but delicious ingredients which add flavor and a nice crunch to this tuna salad. First, we add diced tomatoes. You can use a Roma tomato, also known as a plum tomato, or you can use a vine ripened tomato to make this tuna salad. We then add diced cucumbers. I used ½ English cucumber to make my salad. English cucumbers have smaller seeds which I like because I don’t have to remove the seeds. I peeled my cucumber, but this is optional, especially if using an English cucumber which has a thinner skin than regular cucumbers. For the onion, I used a red onion. I love the pop of color and the flavor the red onion brings to this dish. Alternately, you can use a yellow onion if you’d like.
