I named this dish dad’s low carb chili because I created it for my husband, and he loved it! He actually requests this dish often and enjoys it more than any high carb chili I’ve ever made! The secret ingredient in this chili is black soybeans, which are amazingly low carb and similar in both taste and texture to the high carb beans normally added to chili. I hope you enjoy this dish as much as my husband does!
Let’s talk about the beef!
I used a lean ground beef for this chili. While I prefer an 80/20 mixture for burgers, I like a leaner mixture for chili. So I used a 93% lean ground beef for mine. You can use any beef mixture you prefer. Just make sure you drain the grease well, so you don’t end up with a greasy chili. If you’d like, you could also substitute ground turkey for the beef or use a combination of ground beef and ground turkey. Another option is to use a mixture of ground beef and ground pork. If you’d like to add a bit more heat to your chili, you could even add some Mexican chorizo or hot sausage to your chili.
What other ingredients go into dad’s low carb chili?
To our ground beef, we add diced red peppers, diced onions, salt, and pepper. I added petite diced tomatoes and regular diced tomatoes for my chili. You can use all petite or all regular if you’d like. After tasting this chili, my husband told me he would never have guessed the beans were low carb. If you don’t want to use black soybeans, you can omit them. For extra texture, you can always substitute with some riced cauliflower. Beef broth gives our chili a nice boost of flavor and helps keep the carb count down. For seasoning, we simply combine chili powder and cumin. If you’d like more heat, you can increase the amount of chili powder or could add some diced jalapenos if you want even more heat! The keto sugar cuts the acidity of the tomatoes to create the perfect balance of flavors for our chili.

You have numerous options for serving this chili to keep it low carb. This is a filling chili and can be served as is for a complete meal. If you’d like, you can top your chili with diced onions, shredded cheddar cheese, or sour cream. For some extra heat, you could even top this chili with some diced jalapenos. You can also serve this chili with your favorite keto bread, biscuits, cornbread, or English muffins. Serving this with a keto salad would make for an awesome soup and salad meal! This chili would also pair well with a keto sandwich or lettuce wrap! For parties and get togethers, I love to make chili as a main, and serve it with some fun keto appetizers.

Ingredients
- 2 pounds ground beef
- ½ cup diced red peppers
- ¼ cup diced onion
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 (28 ounce) can petite diced tomatoes
- 1 (14.5 ounce) can diced tomatoes
- 2 (15 ounce) cans black soy beans
- 1 cup beef broth
- 1½ tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon granulated sugar substitute (Swerve)
- Optional: top with diced onions, shredded cheddar cheese, or sour cream if desired
Instructions
1. In a large skillet over medium high heat, add ground beef, red peppers, onions, salt, and pepper. Cook until beef is no longer pink, breaking it up into small pieces as it cooks. Drain grease from ground beef mixture.
2. In a large stockpot, add diced tomatoes, black soy beans, beef broth, chili powder, cumin, and sugar. Stir to combine.
3. Add cooked ground beef mixture and stir to combine.
4. Over high heat, bring mixture to a boil. Decrease to medium heat and simmer for 25-30 minutes, stirring occasionally.
5. Top with diced onions, shredded cheddar cheese, or sour cream if desired.
