I love avocados and it would be rare for you to come visit me and not find avocados, in varying stages of ripeness, setting out in a bowl on my kitchen island! First, I love the taste of avocados. I’ll often eat them sprinkled with salt or with a little hot sauce drizzled over them. Another of my favorites is to slice an avocado then top it with a fried egg, with a runny yolk of course.😊Next, avocados are a great source of healthy fat and are an awesome source of fiber. The other thing I love about avocados is that they’re so easy to incorporate into your day. They’re perfect served as a snack, made into a dip, or as a side for all kinds of keto meals. They’re also a great topping choice for salads, burgers, keto sandwiches, lettuce wraps, all kinds of keto casseroles and egg dishes.
What other ingredients go into this easy avocado tuna salad?
I used regular tuna packed in water for my tuna salad. You can use regular or albacore tuna for your salad. Albacore tuna is firmer and has a milder flavor than regular tuna. I love the taste and color that red onion gives this dish. Alternately, you can use diced yellow or white onions for your salad. We then add fresh chopped parsley which adds flavor, texture, and great color to our tuna salad. I love creamy tuna salad and usually add mayonnaise or a combination of mayonnaise and sour cream for the dressing. For this salad, however, we’re add neither since our avocados provide our creamy element! We do add olive oil, lemon juice, salt, and pepper to give our salad awesome texture and flavor. I love using fresh lemon juice in dishes, but you can substitute with bottled if you’d like.
How can I serve this easy avocado tuna salad?
You have some great low carb options for serving your tuna salad. It’s perfect just served in a bowl as is! It makes for a great snack as well as for a brunch, lunch, or dinner option. If you’d like to serve this as a sandwich, you can use your favorite keto bread. I like to serve mine with chaffles or with keto English muffins. Another great choice is to make this into an awesome low carb lettuce wrap! You can also serve this tuna salad with your favorite lettuce to make a fun and delicious green salad. Ingredients
- 4 (5 ounce) cans tuna, drained
- ¼ cup diced red onion
- ¼ cup fresh chopped parsley
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 avocados, diced
Instructions
1. In a medium mixing bowl, add tuna, onions, and parsley. Stir to combine.
2. Add olive oil, lemon juice, salt, and pepper. Stir to combine.
3. Add avocados and toss gently to combine.
