You have numerous options for the type of chicken you can use to make this dish. I made oven baked split chicken breasts and used some of the meat from them to make this dish. So my chicken was all white meat. Cooked boneless and skinless chicken breasts are also a great white meat choice. Alternately, you can use chicken thighs if you’d like dark meat, or you can use a combination of light and dark meat. I often will boil a whole chicken and use the meat for dishes such as this one. A quick, easy, and delicious option for chicken is a rotisserie chicken. Then you can also choose how much white and dark meat you use for your egg roll in a bowl! I cubed my chicken, but if you’d prefer, you can use shredded chicken for this dish.

We start with sauteing fresh grated ginger with garlic and green onions in some olive oil. I love the vibrant and fresh flavors this brings to our dish. To this we add chicken broth, tamari, and rice vinegar. I often make egg roll in a bowl with ground turkey or ground sausage. It’s usually not necessary to add chicken broth when using ground meat; but we add a little here because the chicken needs some more liquid. For the coleslaw mix, you can use a bag of coleslaw mix or you can chop your own cabbage and make your own mixture. I don’t usually add carrots to my dishes since they are higher in carbs; but coleslaw mixes contain very few carrots, and the carb count is still low. The toasted sesame oil takes this dish over the top, so you won’t want to skip this ingredient!

This is a filling dish that can be served as a meal in itself. I sometimes top mine with some chopped green onions which makes for a pretty presentation. Ingredients
- 1 tablespoon olive oil
- 1 tablespoon fresh grated ginger
- 2 garlic cloves, minced
- 2 green onions, chopped
- ¼ cup chicken broth
- ¼ cup tamari
- 3 tablespoons rice vinegar
- 4 cups cooked, chopped chicken
- 16 ounce bag coleslaw mix
- 1 teaspoon toasted sesame oil
- Optional: top with additional chopped green onions
Instructions
1. In a large skillet over medium heat, add olive oil, ginger, garlic, and onions. Cook for 1-2 minutes or until onions start to soften.
2. Add chicken broth, tamari, and rice vinegar. Stir to combine.
3. Add chicken and stir to coat chicken in sauce. Add coleslaw mix and carefully stir to combine.
4. Cook for 5 minutes or until coleslaw mix is softened.
5. Remove from heat and stir in toasted sesame oil.
