They’re almost like a minor obsession for me.😊It would be a rare day indeed for you to come and visit me and not find fresh brewed coffee awaiting you and a few avocados setting out, in varying stages of ripeness, on my kitchen island. I carefully measure the amount of fat, protein, and carbs I eat every day. Avocados are one of my favorite go-to foods to add healthy fats to my day. They’re a great keto food choice as they provide a super source of fiber, which results in them being low in net carbs. It’s also incredibly easy to incorporate avocados into your day. They make for an awesome snack or side for most any keto meal. I love guacamole, but also love avocados served plain with just a touch of salt. I also like to drizzle some hot sauce over them for serving.
How do I make this easy chunky guacamole?
This is an incredibly quick and easy appetizer dip to make, but there are some things you can do to ensure your dip turns out perfectly every time. First, after halving and discarding the pits from your avocados, you’ll want to chop them into bite sized pieces instead of mashing them. I also like to seed and then roughly chop my tomatoes into similar sized pieces. I don’t like to waste any food, so I save the insides of the tomatoes to use in sauces and soups. For the onions, I do chop them into smaller pieces. We then add fresh chopped cilantro, lime juice, a minced garlic clove, cumin, salt, and a pinch of cayenne to complete this guacamole. This is a mild guacamole. If you’d like to increase the heat level in your dip, you can add more cayenne or can also add some diced jalapenos.
What are some ways I can serve this easy chunky guacamole?
You have some awesome low carb options for serving this guacamole. One of my favorite go-to dipper option for serving guacamole is raw vegetables. Some perfect choices include broccoli, cauliflower, celery, cherry or grape tomatoes, cucumbers, mushrooms, and sliced bell peppers or radishes. You can also use meats, such as pepperoni or sliced sausage or even sliced cheese as dippers. Cheese whisps, keto crackers, and pork rinds are also an awesome choice to use as dippers. You can also serve this chunky guacamole as a delicious topping for burgers, keto sandwiches, lettuce wraps, or any kind of grilled meat. Keto fajitas and tacos will always benefit from the addition of this guacamole as a topping! You can also serve this guacamole as a side for most any kind of keto casserole. Easy Chunky Guacamole
This easy chunky guacamole is a fresh and tasty appetizer dip! It has amazing flavor and will be a big hit every time you serve it!
Ingredients
- 4 avocados
- 2 Roma tomatoes, seeded and roughly chopped
- ¼ cup roughly chopped onion
- 3 tablespoons fresh chopped cilantro
- 1 tablespoon lime juice
- 1 garlic clove, minced
- ½ teaspoon cumin
- ½ teaspoon salt
- Pinch of cayenne
Instructions
1. Halve avocados and discard pits. Cut the avocado into bite sized pieces and add to a medium mixing bowl.
2. Add tomatoes, onion, cilantro, lime juice, garlic, cumin, salt, and cayenne. Stir to combine.
3. Serve immediately or cover with plastic wrap, pressing wrap down onto guacamole, and store in refrigerator until ready to serve.
