I used pork tenderloin for this dish. It’s a nice cut of meat to use for crockpot dishes. You could also use pork loin if you’d prefer. There are some differences between pork loin and pork tenderloin. Pork tenderloins are smaller and narrower than pork loins, while pork loins are larger and wider and have a layer of fat on top. If you choose to use a pork loin, you’ll want to trim some of the fat from it either before or after cooking it. Another option is to use a boneless pork shoulder for this dish. I cut my pork into medium sized pieces for this dish; but you could also dice them into smaller pieces if you’d like. We simply season our pork with salt and pepper.
What other ingredients go into this easy crockpot pork and cabbage dish?
We add just a few simple ingredients to our pork to create this awesome comfort food dish. First, we top our pork with chopped onions. This adds great flavor and texture to our dish. I love the addition of fresh parsley, but you could substitute with dried parsley if you’d like. You’ll want to use about 2½ tablespoons of dried parsley in place of the ½ cup of fresh. I used all green cabbage for my dish, but you could toss in a little red cabbage if you’d like. You can either roughly chop your cabbage, as I did, or you can thinly slice it. I think caraway seeds add great flavor to cabbage dishes, but you can omit if you’d prefer. Salt and pepper are the other seasonings we add to this dish. We then simply add some beef broth to make this dish juicy and delicious.
How can I serve this easy crockpot pork and cabbage?
This dish is amazingly filling and can be served as a meal in itself. But you have some wonderful options for adding to it if you’d like. You could serve this dish with some keto biscuits, cornbread, or English muffins. A nice option is to serve this dish with a green salad, using either lettuce or spinach, and adding your favorite salad toppings! You could also add a cooked low carb vegetable as a side for this main. Some great vegetable options include asparagus, broccoli, Brussels sprouts, cabbage, cauliflower, green beans, spinach, and zucchini. You can either boil, grill, roast, saute, or steam your vegetables. I served my pork and cabbage with a side of creamy keto horseradish dressing! You could also serve it with a side of your favorite kind of mustard.

Ingredients
- 2½ pounds pork tenderloin, cut into pieces
- 1 teaspoon salt, divided
- 1 teaspoon pepper, divided
- ½ cup chopped onion
- ½ cup fresh chopped parsley, divided
- 1 medium head green cabbage, roughly chopped
- 1 teaspoon caraway seeds
- ½ cup beef broth
Instructions
1. Season pork pieces evenly with ½ teaspoon salt and pepper. Place into crockpot.
2. Top pork evenly with chopped onion and ¼ cup chopped parsley.
3. Top evenly with chopped cabbage. Sprinkle caraway seeds, remaining parsley, and remaining ½ teaspoon salt and pepper over cabbage.
4. Pour beef broth over cabbage.
5. Cook on low for 4-5 hours.
