This easy crockpot whole cauliflower is an awesome side for everyday meals! It’s also elegant enough to serve for holiday and special occasion meals. With just 10 minutes of prep time, you can make this dish on even your busiest of days.
Let’s talk about cauliflower!
Cauliflower is an awesome keto vegetable choice. It’s low in calories and carbs, but rich in nutrients. You’ll most often see white cauliflower, but it can also be green, orange, and purple. I especially love using orange cauliflower to make cauliflower mac and cheese because the color of the finished dish is amazing! Cauliflower is delicious served both raw and cooked. Raw cauliflower is awesome served with other raw veggies and with dip as an appetizer or snack. When cooking cauliflower, you can boil, grill, microwave, roast, saute, or steam it. Cauliflower can easily be incorporated into all kinds of dishes. It can be served as a side dish, cooked just as is, or as a side of mashed cauliflower. It also makes an amazing addition to casseroles and soups or stews. Another awesome way to serve cauliflower is to rice it and use it in place of regular rice.
What other ingredients go into this easy crockpot whole cauliflower?
We make a simple but delicious sauce for this cauliflower. We combine olive oil, Dijon mustard, fresh lemon juice, minced garlic, fresh grated Parmesan cheese, salt, and pepper to make our sauce. I love the flavor that Dijon mustard brings to this sauce, but you can use regular yellow mustard if you’d like. If you want an extra kick of flavor, you could also use spicy brown mustard. You can also use about 1½ tablespoons of bottled lemon juice in place of the fresh lemon juice. If you’d like a more garlicky sauce, feel free to add more garlic! I highly recommend buying a block of Parmesan cheese and grating it yourself. It melts better and doesn’t have the added ingredients often found in pre-grated cheeses. After mixing the sauce ingredients together, I brush the mixture evenly over the head of cauliflower with a silicone brush.
What are some ways I can serve this easy crockpot whole cauliflower?
You have some awesome low carb options for serving this dish. It’s easy enough to serve for everyday meals, but it’s also elegant enough to serve for holiday or special occasion meals. I love the presentation of serving this cauliflower on a platter whole, then letting everyone cut a wedge or some florets themselves. Alternately, you can cut the cauliflower and serve it that way. This dish pairs well with all kinds of meats including beef, chicken, pork, and seafood. You can serve it with things such as burgers, keto sandwiches, and lettuce wraps. It’s also a wonderful dish to serve with steaks, roasts, and seafood mains. You can also serve this cauliflower with most any kind of keto casserole. It reheats well so it works great to serve as leftovers too!
