Our ingredients include one whole egg, white wine vinegar, Dijon mustard, salt, and avocado oil. For my egg, since we’re using a raw egg, I used a pasture raised egg for this mayonnaise. If you’re concerned about the safety of raw eggs, you can use a pasteurized egg. White wine vinegar adds the perfect acidic element to this mayonnaise. The Dijon mustard adds awesome flavor and also helps our mayonnaise to emulsify. We need to add some salt to this mayonnaise, and I found that ¼ teaspoon of salt created the most amazingly flavorful mayonnaise. Last, to make this mayonnaise keto and to create the most awesome flavored mayo, we add avocado oil. This is a mild and light oil that works perfectly to create a delicious keto mayonnaise.

For oil, I prefer avocado oil because of its light and neutral flavor. If you’d like to use olive oil, I’d recommend using light olive oil so the flavor isn’t heavy and overpowering.

For the best results, you’ll want to let your egg set out on the counter for about 30 minutes to let it come to room temperature. You’ll then want to add your egg, vinegar, mustard, and salt to the blender first. You can then either pulse or blend on low for 15-20 seconds, just to blend the ingredients together. Next is the most important part, adding the avocado oil. If you add the oil too fast, the mixture won’t emulsify well, and you’ll end up with something akin to mayonnaise soup. Don’t ask me how I know this fact!😉You’ll want to add your oil slowly in a very thin stream. After adding all of my oil, I then blend for an additional 15-20 seconds. You’ll want to store your mayonnaise in the refrigerator.
