When you’re short on time but want big flavors, these easy keto chicken nuggets are a perfect choice. I love cooking for my family, and my goal is always to serve them comfort food. These chicken nuggets are so quick and easy to make yet turn out amazingly moist and flavorful!

These chicken nuggets are incredibly quick and easy to make, due mostly to the fact we’re using canned chicken breast. I love using fresh chicken to make dishes and a few of my favorite dishes include keto baked chicken nuggets and chicken tenders, and keto chicken Parmesan bites. But for these chicken nuggets, we’re using canned chicken which saves a lot of time, but also results in amazingly delicious, healthy, and filling chicken nuggets. Canned chicken is made from chicken breast which makes it a high protein and zero carb food choice. Canned chicken is packed in water, so for the best results, you’ll want to drain the chicken well. I used 2 cans of chicken, but you can easily halve this recipe if you’d like. You can also double it if you’d like to make a large batch of chicken nuggets.

What other ingredients go into these easy keto chicken nuggets?
To our chicken, we simply add eggs, shredded mozzarella cheese, garlic powder, and pepper. For the cheese, I highly recommend buying a block of mozzarella and shredding it yourself. It melts the best and you can be assured there are no extra ingredients, which are often added to packaged shredded cheese. I love the addition of garlic powder and pepper, but you can add your favorite spices to make these nuggets your own! Since our cheese has a good amount of salt and most canned chicken does too, I don’t any additional salt to my nuggets. I’ve made these nuggets by breaking up the chicken into small pieces, then simply mixing everything in a bowl before forming the mixture into nuggets. These are easy and good, but I prefer the texture created by adding all the ingredients to a blender and blending until the mixture is mostly smooth.

What are some ways I can serve these easy keto chicken nuggets?
You have some awesome options for serving your chicken nuggets! They’re perfect to serve as a main, but you can also serve them as an appetizer or snack. You can serve these nuggets just as they are or with keto ketchup or a keto dip or dressing. There are quite a few brands of keto ketchup you can buy, or you can easily make homemade ketchup. If buying, you’ll want to make sure there’s no added sugar or other ingredients you don’t want. I also love making homemade dips and dressings. A couple great options to serve with these nuggets are ranch dip and honey mustard dressing. If serving as a main, they pair nicely with keto cauliflower mac and cheese or with low carb cooked vegetables. Another great option is to serve them with a green salad or with a side of coleslaw.

Easy Keto Chicken Nuggets

Ingredients
- 2 (12.5ounce) cans chicken breast, drained well
- 2 eggs
- 1 cup shredded mozzarella cheese
- ½ teaspoon garlic powder
- ⅛ teaspoon pepper
Instructions
1. Pre-heat oven to 425 degrees. Line a baking sheet with parchment paper. Set aside.
2. Add all ingredients to a blender and blend until combined and mixture is mostly smooth.
3. Shape into 16 equally sized nuggets and place onto prepared baking sheet.
4. Bake 22-25 minutes, until nicely browned, turning at halfway point.
