I used a bone-in pork shoulder roast for my pulled pork. I find this creates the most flavorful and juiciest pulled pork. If you’d like, you can also use a pork butt roast for your pulled pork. You can use a boneless pork roast if you’d prefer. If you choose to use a leaner cut of meat, such as a pork loin, just know it may not turn out as juicy since it is a leaner cut of pork.

You’ll want to remove your roast from its packaging and discard the liquid in the packaging. Then place it in your crockpot and set aside. The seasoning for the pork roast is simple, yet produces an incredibly delicious outcome. We simply combine garlic powder, onion powder, salt, and pepper. This spice mixture gets rubbed into all sides of the pork roast, including on the layer of fat on the roast. After seasoning, place your roast, fat side up, in the crockpot. Pour the chicken broth around the roast. Cover and cook on low for 8 hours or until you can easily shred your meat with two forks. I remove as much fat as possible from the roast before shredding.

I enjoy eating this pulled pork, as is, with just a little of the drippings stirred in. You can also add your favorite keto barbecue sauce, keto ketchup, mustard, or a combination of these for your pulled pork. You can buy keto barbecue sauce, or you can make your own homemade keto barbecue sauce. This pulled pork can be eaten as is, in a sandwich using your favorite keto bread or English muffins, or even in a lettuce wrap! Ingredients
- 6-9 pound bone-in pork shoulder roast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup chicken broth
- Optional add ins: keto barbecue sauce, keto ketchup, mustard, roast drippings
Instructions
1. Remove pork roast from packaging and set aside.
2. In a small bowl, add garlic powder, onion powder, salt, and pepper. Stir to combine.
3. Rub seasoning mix evenly into pork roast.
4. Place roast, fat side up, into crockpot. Pour chicken broth around roast.
5. Cook on low for 8-10 hours.
6. Remove roast from crockpot. Discard bone and as much fat as desired. Use 2 forks to shred roast.
7. If desired, add your favorite keto barbecue sauce, keto ketchup, mustard, or roast drippings to shredded meat.
