Ingredients
- 2 (8 ounce) packages cream cheese, softened
- 1 cup powdered sugar substitute (Swerve)
- Juice and zest of 1 lemon
- 1 teaspoon vanilla
- ⅛ teaspoon salt
- 1 cup heavy whipping cream
- Optional: top with keto whipped cream
Instructions
1. In a large bowl, using an electric mixer, add cream cheese and powdered sugar. Beat until mixture is smooth and creamy.
2. Add lemon juice, lemon zest, vanilla, and salt. Beat until creamy and mostly smooth. Scrape down the sides and bottom of bowl with a rubber spatula as needed to incorporate ingredients.
3. Add heavy cream. Beat until mixture thickens, 3-4 minutes.
