My family absolutely loves this easy keto maple granola. This granola is a perfect snack option. It also makes for an amazingly crunchy and flavorful cereal option. We combine an awesome mixture of nuts and seeds with keto sweeteners, butter, vanilla, and cinnamon to make this delicious granola. You can serve this as an appetizer, snack, or keto cereal!
Let’s talk about the nuts in our granola!
Nuts bring awesome taste and texture to our granola, while also helping to keep it low in carbs. Nuts do vary a bit in their carb counts, so I usually avoid cashews and pistachio nuts because they’re higher in carbs than other nuts. For my granola, I used a combination of almonds, pecans, and walnuts. I cut my almonds in half, then roughly chopped the pecans and walnuts. You have some other great options for the kind of nuts you use for your granola. Macadamia nuts are an awesome choice. I’d recommend chopping them in half or chopping them to make them into smaller pieces. Brazil nuts are also a great choice, but again you’ll want to chop them up if you add them to your granola. Peanuts and hazelnuts are a couple of other wonderful options to use for this granola.
What other ingredients go into this easy keto maple granola?
To our nuts, we add unsweetened coconut. You can use coconut flakes or coconut chips; you’ll just want to make sure your coconut is unsweetened. We then add both pumpkin seeds and sunflower seeds. They add amazing crunch and texture to this granola. We then add melted butter, keto maple syrup, and vanilla. I used Lakanto maple syrup for my granola, but you can use your favorite keto maple syrup for yours. For sweetness, we add both keto brown sugar and keto granulated sugar. I used the Swerve brand for both of my sugars. They’re both amazingly similar in their sweetness level to regular sugar. I then added a little cinnamon to complete this granola. You can add even more cinnamon if you’d like.
How do I make this easy keto maple granola?
This granola is amazingly easy to make, but there are a few things you can do to ensure your granola turns out perfectly every time. First, I recommend chopping your nuts into pieces. You can simply cut your almonds in half, then use a knife or your hands to break your pecans and walnuts into smaller pieces. Next, when adding the butter, maple syrup, and vanilla mixture to your nuts, seeds, and coconut, you’ll want to stir well to make sure everything gets coated evenly. This will help ensure that the sugar and cinnamon mixture adheres well to the nuts, seeds, and coconut. When baking your granola, you’ll want to stir it at the halfway point, then keep a close eye on it to make sure it browns nicely but doesn’t burn. You can serve this as a snack, or as a cereal with almond or coconut milk.

Easy Keto Maple Granola

Ingredients
- 1 cup pecans, chopped
- 1 cup walnuts, chopped
- ½ cup almonds, chopped
- ⅓ cup unsweetened coconut chips or flakes
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- 3 tablespoons butter, melted
- 2 tablespoons keto maple syrup
- 1 teaspoon vanilla
- 3 tablespoons brown sugar substitute (Swerve)
- 3 tablespoons granulated sugar substitute (Swerve)
- 1 teaspoon cinnamon
Instructions
1. Pre-heat oven to 325 degrees. Line a large rimmed baking sheet with parchment paper. Set aside.
2. In a large mixing bowl, add pecans, walnuts, almonds, coconut, pumpkin seeds, and sunflower seeds. Set aside.
3. In a small mixing bowl, add melted butter, keto maple syrup, and vanilla. Stir to combine.
4. Pour butter mixture over nut mixture and stir to completely coat nut mixture.
5. In a small mixing bowl, add brown sugar, granulated sugar, and cinnamon. Stir to combine. Add to nut mixture and stir to completely combine.
6. Spread in an even layer onto prepared baking sheet.
7. Bake for 20 minutes, stirring at halfway point.
8. Allow to cool, break apart, and serve immediately, or store in an airtight container until ready to serve.
