We use hearts of palm linguine to make this easy keto mushroom linguine. You can serve this dish as is, or you can top it with some fresh chopped parsley or fresh grated Parmesan. This dish comes together in just 30 minutes, so you can make it on even your busiest of days.

Let’s talk about heart of palm pasta!
It’s so awesome to have low carb substitutions for pasta, and hearts of palm pasta is a great one! Although not exactly the same, it’s incredibly similar in texture to regular pasta. Heart of palm pasta is also low in carbs and calories and is naturally gluten free. One of the greatest things about hearts of palm pasta takes is that it’s fairly neutral in flavor and takes on the flavor of the ingredients and sauce you add to it. Palmini is one brand of hearts of palm pasta, but you can use other brands. One of my favorites is Trader Joe’s hearts of palm pasta. I used linguine pasta to make this dish, but you could use angel hair or spaghetti hearts of palm pasta if you’d like. For the best results, I recommend draining your pasta, rinsing it, then boiling it until it reaches your desired tenderness level.

What other ingredients go into this easy keto mushroom linguine?
Mushrooms are one of the stars of this dish and I used cremini mushrooms. You could also use white mushrooms if you’d like. I find creminis to have a stronger mushroom taste and a deeper earthy flavor which I prefer. We saute our mushrooms in a little olive oil with some diced red onions. Then we add some butter which adds richness to our dish, along with some dried parsley. If you’d like to use fresh parsley, you’ll want to add 1 tablespoon of fresh chopped parsley in place of the teaspoon of dried parsley. For seasoning, we add salt, garlic powder, and pepper. You can give your dish a taste and add more salt and pepper if you’d like. This dish is delicious served just as is, but you can also top your dish with some fresh chopped parsley or with some fresh grated Parmesan cheese.

What can I serve with this easy keto mushroom linguine?
You have some great low carb options for serving this dish! I’m a salad lover, so I enjoy starting meals with a green salad. Caesar salads and wedge salads are two of my favorite salads. I also love chopping up some iceberg or romaine lettuce and serving it with my family’s favorite salad toppings. Some of these include diced tomatoes, fried and crumbled bacon, hard boiled eggs, shredded cheese, and sliced avocadoes. My daughter and I also love blue cheese crumbles. Another great choice is to start your meal with a keto soup. You can also serve this pasta with a side of vegetables. Some great low carb options include asparagus, broccoli, Brussels sprouts, cauliflower, and green beans. We also enjoy boiled radishes and roasted radishes.

Easy Keto Mushroom Linguine
This easy keto mushroom linguine is amazingly delicious and amazingly low in carbs! This dish is comfort food at its finest!
Ingredients
- 1 (12 ounce) package hearts of palm linguine
- 1 tablespoon olive oil
- 8 ounces mushrooms, sliced
- 2 tablespoons diced red onions
- 1 tablespoon butter
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ⅛ teaspoon pepper
- Optional: top with fresh chopped parsley or fresh grated Parmesan
Instructions
1. Drain and rinse hearts of palm linguine. Boil 10-20 minutes or to desired tenderness. Drain, reserving pasta water.
2. While linguine is boiling, in a large skillet heat olive oil over medium high heat. Add mushrooms and onions. Saute 7-8 minutes, until mushrooms are nicely browned.
3. Add butter, parsley, salt, garlic powder, and pepper. Stir to combine. Add linguine and ¼ cup reserved pasta water.
4. Bring to a boil and boil 1-2 minutes, or until liquid is absorbed.
5. Top with fresh chopped parsley or fresh grated Parmesan if desired.
