I love serving my family filling and satisfying comfort foods, and this easy keto pork shoulder was a huge hit at my house! I often find pork shoulder on sale and love creating new ways to cook it. This dish starts with searing the roast, then cooking it in the oven until it reaches your desired tenderness level. You can serve this roast as is or can shred it and serve it that way!
Let’s talk about our pork roast!
You can make this dish using a boneless or bone-in pork shoulder roast. It’s easier to use a boneless roast as you can simply prepare it by cutting it into pieces. You can cut your roast into medium sized or larger pieces to make this dish. If you use a bone-in pork shoulder roast, you’ll want to cut your roast into pieces and cut the meat from around the bone. This is a bit more difficult to do, but there are also advantages to it! After cutting the meat into pieces, I use the rest of the meat and bone to make stock. I boil them with some celery, onions, and carrots along with some salt and pepper for a couple of hours. Then I remove and chop the meat to use in other dishes and I strain the rest to use as broth in soups and stews.
How do I make this easy keto pork shoulder?
This is an incredibly easy dish to make, but I do have some tips to ensure your roast comes out perfectly every time. First, after cutting up your pork roast, you’ll want to season the pieces evenly with garlic powder, onion powder, salt, and pepper. Then you’ll want to sear your pork pieces in a large stockpot over medium high heat. Depending on the size of your roast, you’ll want to sear your meat in batches. After searing all your pork pieces, you’ll want to add them all back to the stockpot and add your broth. I used beef broth, but you can use whatever kind you’d like. You can then cook your roast, covered, in the oven for 2-3 hours, until it reaches your desired tenderness level. You can serve your roast in pieces or can shred it and serve it that way if you’d prefer.
