To make the creamy base for our shake, we combine unsweetened almond milk and heavy whipping cream. Unsweetened almond milk is an awesome keto choice. It’s a low-calorie and low carb drink. When buying, you’ll want to make sure you’re using unsweetened and unflavored to keep the carb count down. You can substitute with unsweetened coconut if you’d like. You’ll just want to make sure you’re using the kind from a carton and not the kind from a can. Heavy whipping cream brings amazing richness to this shake and it’s also a wonderful keto option as it’s relatively low in carbs and contains a good amount of fat. Fun fact for the day, in order to be classified as heavy whipping cream, the cream must contain at least 36% milk fat. The combination of almond milk and heavy whipping cream gives this shake amazing richness and just the right thickness!
What other ingredients are added to this easy keto pumpkin shake?
To our unsweetened almond milk and heavy whipping cream, we add just a few simple but delicious ingredients. We add a can of pumpkin to our shake. You may also see this labeled as pumpkin puree. You will want to make sure you’re not buying canned pumpkin pie mix as this contains sugar and is high in carbs.😉 For the keto powdered sugar, I used the Swerve brand as it contains zero calories and zero carbs. It’s also similar in its sweetness level to regular sugar. I think this shake has the perfect sweetness level, but you can always start with adding a little less keto sugar, then add more if you’d like. To finish off our shake, we add pumpkin pie spice, vanilla, salt, and ice. For a fun change up, you could also use ½ teaspoon of vanilla and ½ teaspoon of almond or maple extract.
How can I serve this easy keto pumpkin shake?
This drink is amazing served just as it is! You can also top your smoothie with some keto whipped cream or sprinkle some cinnamon or fresh grated nutmeg over it. You could even sprinkle it with some pumpkin pie spice or even with some keto powdered sugar. It’s incredibly easy to make your own keto whipped cream. I recommend chilling your mixing bowl and beaters for 15-20 minutes before using. Then, to your chilled bowl, you’ll add 1 cup of heavy whipping cream with 2 tablespoons of keto powdered sugar and 1 teaspoon of vanilla. You’ll want to beat this until heavy peaks form. Heavy peaks mean when you remove your beaters, they form peaks which completely hold their shape. A couple other fun options include topping this shake with keto pumpkin whipped cream or with some keto cinnamon whipped cream.
