I love adding peppers and onions to all kinds of dishes. One cup of peppers contains about 4 net grams of carbs and one cup of onions contains approximately 12 net grams. For this reason, you’ll notice I usually add more peppers than onions to my dishes. I’ve found that adding a little bit of peppers and onions gives dishes awesome flavor and keeps the carb count down. Our peppers and onions dish comes in at under 4 net grams of carbs per serving. For this dish, I used a green, orange, and red pepper. You can use any color or color combination you’d like. The same goes for the onions. I used red and yellow onions, but you can use red, white, or yellow onions or a combination for your dish.

I was amazed at how delicious this dish turned out to be using just a few simple ingredients. We toss our vegetables in olive oil. Since going keto, I’ve pretty much limited my oils to olive oil and to avocado oil. I love the flavor olive oil brings to this dish, but avocado oil could be substituted if you’d prefer. For seasoning, we use a combination of chili powder, oregano, salt, and pepper. I know it sounds simple, and it is, but this combination of seasonings creates an amazing depth of flavor. I used regular chili powder for this dish, but you could use dark chili powder or ancho chili powder if you’d like. You can taste your peppers and onions and add more salt and pepper if needed.

This side dish will complement all kinds of keto meals. I grilled up some burgers and served these peppers and onions as a side for the meal. This dish will go well with any grilled meats including beef, chicken, pork, and seafood. You can also serve this dish with keto casseroles and egg dishes. Another great option is to serve this with keto sandwiches and wraps. Serving these peppers and onions with a keto meatloaf or keto meatballs is also a great option. You can use these veggies to make an incredible salad. Start with your favorite lettuce. Add some cooked ground beef or turkey or some cooked chicken. Then add the grilled peppers and onions and top with either your favorite salad dressing or with some salsa, sour cream, and avocado. Yum!

Ingredients
- 1 medium green pepper, sliced
- 1 medium orange pepper, sliced
- 1 medium red pepper, sliced
- 1 small red onion, sliced
- 1 small yellow onion, sliced
- 2 tablespoons olive oil
- ¼ teaspoon chili powder
- ¼ teaspoon oregano
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Pre-heat grill.
2. Place peppers and onions into an aluminum pan.
3. Add olive oil and seasonings. Toss to combine.
