Let’s talk about our mozzarella balls!
Mozzarella balls are balls of fresh mozzarella, and they come in a variety of sizes. Fresh mozzarella is creamy, with a delicate mild and milky flavor. It’s typically made with cow’s milk, but you may also see it made with the milk from water buffalo. I used ciliegine balls for this dish. Ciliegine balls are cherry-sized balls which make for a perfect bite! If you’d like, you can also use Perlini, also known as mozzarella pearls, to make this dish. These are smaller than ciliegine balls but would work great as well. If you use a larger mozzarella ball, you can simply cut it into smaller, bite-sized pieces. Whichever you use, you’ll want to drain the liquid from the mozzarella and lightly dry it before making this dish.
How do I make the dressing for these easy marinated mozzarella balls?
The dressing for this dish comes together quickly, but it’s amazingly flavorful! We start with olive oil. My go-to olive oil is the Kirkland brand organic extra virgin olive oil. It has a flavor profile and depth of flavor I enjoy! We then add fresh minced garlic, fresh chopped basil, and fresh chopped parsley. I used 2 garlic cloves to make this dressing, but you can add more if you’d like. I love fresh herbs, and used them for this dressing. You can substitute with dried, but you’ll want to use about one-third the amount if you use dried. I love the mild heat and color that red pepper flakes bring to this dish. You can start with ¼ teaspoon and add more to taste. If you want a milder dish, you can omit the red pepper flakes altogether. We then simply add salt and pepper to complete our dressing.
