In terms of taste, mascarpone is a bit sweeter while cream cheese has more of a tangy taste. Cream cheese is a bit firmer in texture, while mascarpone has a creamier texture. The biggest difference between the two is the amount of milk fat each contains. The fat content of cream cheese is typically 30-40%, while the fat content of mascarpone contains approximately 60-75% fat. You can substitute cream cheese for your cookie dough, just make sure to use full fat cream cheese.

For my cookie dough, I used Lily’s semi-sweet chocolate chips. You can substitute with your favorite brand. You can also use dark or milk chocolate if you’d prefer. Another option you have is to chop up your chips a bit if you’d like smaller pieces for your cookie dough!

Then you’ll simply add the almond flour, both sugars, vanilla, and salt and beat until all ingredients are combined. I like to add my chocolate chips, then beat the mixture just until the chocolate chips are evenly mixed into the dough. You can also stir them in if you’d like. At this point, you can either eat your edible cookie dough or refrigerate it until you’re ready to serve it. If you’d like, you can also form it into about 16 cookie dough balls. If so, you’ll want to chill the dough in the refrigerator for about 15 minutes before making your cookie dough balls.

Ingredients
- ½ cup (1 stick) butter, softened
- 8 ounces mascarpone cheese, softened
- ½ cup almond flour
- ½ cup powdered sugar substitute (Swerve)
- ¼ cup brown sugar substitute (Swerve)
- 1 teaspoon vanilla
- ¼ teaspoon salt
- ½ cup keto semi-sweet chocolate chips
Instructions
1. In a large mixing bowl, beat butter and mascarpone cheese together until creamy and combined.
2. Add almond flour, powdered sugar, brown sugar, vanilla, and salt. Beat until combined.
