Let’s talk about cucumbers!
Cucumbers are a great keto food choice! They’re low in calories and low in carbs. There are many varieties of cucumbers, but the ones you’ll see most often in stores are pickling, slicing, and English cucumbers. Pickling cucumbers are smaller and fatter than the other two types. The medium to large cucumbers with dark green skin are classified as slicing cucumbers. I used these for my cucumber bites, but English cucumbers work great too. The skin on English cucumbers is thinner, so if you use this kind, you don’t have to peel them if you don’t want to. For a pretty presentation, I partially peeled my cucumbers to give them a striped appearance. If your cucumbers are at all wet when you cut them, you can dry them a bit on a paper towel while you work on the topping for your bites.
How do I make the cream cheese topping for these everything bagel cucumber bites?
I absolutely love the cream cheese mixture for these bites. We start by combining softened cream cheese and softened butter. This helps to create the most amazingly creamy mixture. To this we add sour cream which adds richness and some awesome flavor. I recommend using full fat cream cheese and sour cream for this dish…ok for everything.😊For seasonings, we add garlic powder, onion powder, dill, and salt. You’ll want to beat your cream cheese mixture until it’s nice and creamy. You can then use a piping bag or a plastic bag with a corner cut off to top your cucumber pieces with the cream cheese mixture. You can also simply use a spoon or knife to spread it onto the cucumber pieces. The last step in making these bites is to simply top each one with everything bagel seasoning.
How can I serve these everything bagel cucumber bites?
You have some great and fun options for serving these cucumber bites! These bites make for a quick and easy snack any time of the day. You can also easily pack some up for lunches as well. I love serving appetizers for all kinds of occasions. Sometimes I make up occasions, such as, “It’s a Wonderful Life night” during the Christmas season, just so I can serve appetizers!🎄These cucumber bites are a great appetizer for holiday and special occasion meals. They are also so pretty and are fun to serve for barbecues, parties, and potlucks.
