So, I took the classic ingredients found in a Reuben and made a quick, easy, cheesy, and delicious skillet dinner. Enjoy!

I love, love, love making homemade condiments, dressings, and sauces. When you make your own, you can be certain they include only ingredients you want, and you are in charge of exactly how much of each ingredient you use! You can make yours saltier, sweeter, or spicier based on your taste preference! For our homemade Thousand Island dressing, we combine some amazing low carb ingredients to create a delicious dressing that can be used as a dressing for salads or for keto Reuben sandwiches, dips, or casseroles. To keep our dressing low carb and keto, we use keto ketchup and mayonnaise. I like the Primal Kitchen ketchup and the Chosen Foods avocado oil mayonnaise, but you can use any keto ketchup and mayonnaise you’d like. We also use unsweetened dill relish and keto sugar. I used the Swerve brand sugar as it contains zero calories and carbs, and it’s delicious.
What other ingredients go into this extra cheesy keto Reuben skillet?
Ok, I know the classic meat that goes into a Reuben is corned beef. You can absolutely use this for your Reuben skillet! I had some extra turkey pastrami and used it for my dish. Either is a great and delicious option. You can use regular sauerkraut or sauerkraut which contains caraway seeds for this dish. If you’d like, you can also use homemade sauerkraut. For our cheese, we use a traditional Swiss cheese for this dish. If you’d like, you can use any good melting cheese or combination of cheeses for yours! Some fun options include cheddar, colby, gouda, Monterey jack, mozzarella, or even pepper jack cheese! I added ½ cup of homemade Thousand Island dressing to my dish; but you can add even more if you’d like! For best results, I recommend making this dish and serving it immediately if possible.
How can I serve this extra cheesy keto Reuben skillet?
This is an awesome dish served as is for a complete meal all in itself. If you’d like, you can also drizzle some additional Thousand Island dressing on top of yours or even a dollop of sour cream. A delicious meal option is to add a keto salad or soup to this dish. If you’d like, you can always add keto bread, biscuits, or English muffins as a fun side. You can also add any keto vegetable as a side to this skillet meal. Another fun idea is to make some keto appetizers and then serve this Reuben skillet with them. Ingredients
For the Thousand Island dressing:
- 1 cup keto mayonnaise
- ¼ cup keto ketchup
- 2 tablespoons white wine vinegar
- 2 tablespoons unsweetened dill relish
- 1 tablespoon finely diced onion
- 1 tablespoon granulated sugar substitute (Swerve)
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
- ⅛ teaspoon pepper
For the Reuben skillet:
- 1 tablespoon butter
- 16 ounces turkey pastrami, sliced
- ¾ cup sauerkraut, drained
- 2 cups shredded Swiss cheese
Instructions
For the Thousand Island dressing:
1. In a small mixing bowl, add all dressing ingredients.
2. Whisk to combine. Set aside.
For the Reuben skillet:
1. In a large skillet, over medium high heat, melt butter. Add pastrami. Saute, stirring frequently, until pastrami is browned, 6-8 minutes.
2. Add sauerkraut and ½ cup Thousand Island dressing. Stir to combine.
3. Add cheese. Decrease heat to medium and stir until cheese is melted and mixture is heated through.
4. Serve immediately. Drizzle with additional Thousand Island dressing, if desired.
