Cauliflower is also a versatile vegetable that can be eaten raw or cooked. You can boil, grill, roast, saute, or steam cauliflower. Using riced cauliflower in place of regular rice produces a delicious and low carb option for so many keto dishes. For this dish you can rice your own cauliflower using either a box shredder or food processor. Frozen cauliflower rice is also a great option. I almost always have frozen cauliflower rice in the freezer because it’s a delicious and quick option for all kinds of dishes. I used white cauliflower, but if you can find it, you could use green, orange, or purple cauliflower for a fun change up!
What other ingredients are added to make this fajita cauliflower rice?
I wanted to use traditional fajita ingredients to make this dish, so I added onions, green peppers, and red peppers. I love the combination of red and green peppers, but you can use any color or color combination of bell peppers to make this dish. For the onions, I used a yellow onion, but you can substitute with a red or white onion if you’d like. Because we’re making cauliflower rice and not traditional fajitas, I diced the onion and peppers instead of slicing them. We still get the flavors of fajitas, but the diced vegetables help to create the perfect texture for our dish. Next, we add chicken broth and tomato paste to help create an awesomely delicious sauce. For seasoning, we add fajita seasoning. I used my favorite homemade keto fajita seasoning, but alternately you can use your favorite fajita seasoning for your dish if you’d like.
How do I make homemade keto fajita seasoning for this fajita cauliflower rice?
It’s incredibly quick and easy to make your own fajita seasoning. And when you make your own, you can be assured there are no added ingredients you don’t want. For our seasoning, we combine 1 tablespoon of chili powder with 1 teaspoon of cumin, garlic powder, keto granulated sugar, and paprika, ½ teaspoon of onion powder, oregano, and salt, and ¼ teaspoon of cayenne and black pepper. When making your own seasoning mixes, you can adjust ingredients to make the mix your own. If you’d like a spicier mix, you can add more cayenne. You can also adjust the amounts of sugar and salt for your taste preference. You can also use smoked paprika if you’d like to add a smoky flavor to your seasoning mix!

Fajita Cauliflower Rice

Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- ⅓ cup diced onion
- ⅓ cup diced green peppers
- ⅓ cup diced red peppers
- ¾ cup chicken broth
- 3 tablespoons tomato paste
- 1 tablespoon keto fajita seasoning
- 16 ounces riced cauliflower
Instructions
1. In a large skillet, over medium high heat, add butter and olive oil.
2. Once butter is melted, add diced onion and peppers. Saute for 3-4 minutes, or until vegetables start to soften.
3. Add chicken broth, tomato paste, and fajita seasoning. Stir or whisk to combine.
4. Add riced cauliflower. Stir to combine.
5. Cook for 5-10 minutes, stirring frequently, or until cauliflower reaches desired tenderness.
Notes
You can use homemade keto fajita seasoning or your favorite fajita seasoning for this dish.
