Let’s talk about the meats in this soup!
We add both ground beef and bacon to this soup. I used a 93% lean ground beef mixture for my soup. Alternately, you can use a fattier mixture if you’d like. You’ll just want to make sure you drain the grease from your meat before adding the meat to your soup. If you’d prefer, you can substitute ground turkey in place of the ground beef. Another good choice is to use half ground beef and half ground pork to make this soup. To our ground meat we simply add diced onions, salt, and pepper. I love the addition of bacon to this soup. It adds amazing flavor and an additional salty element. There’s just something extremely comforting about adding bacon to all kinds of dishes. I used regular bacon as that’s what my family enjoys. You could also use turkey bacon if you’d prefer.
What other ingredients go into this hearty ground beef cabbage soup?
To make this soup, we start by sauteing bell peppers in butter and olive oil. I love the color and flavor combination of green and red peppers, but you can use any color or color combination of bell peppers to make this soup. We then add chopped green cabbage and chopped cauliflower. This adds amazing flavor and texture to our soup and makes it incredibly filling. You can also add some chopped red cabbage if you’d like. I used beef broth to make my soup, but you could use chicken broth or vegetable broth to make yours. We then add diced tomatoes, Italian seasoning, tamari, garlic powder, and paprika. I used petite diced tomatoes, but you can use regular diced tomatoes if you’d like. You can give your soup a try and add more salt and pepper to taste.
