Our seasoning mixture combines some amazingly delicious herbs and seasonings. This is what we’re using to dry rub our chicken. If you’ve never tried herbs de Provence, you’re in for an awesome surprise! This seasoning mix gets its name because its ingredients are all commonly used in the Provence region of southeastern France. And although you may find some variety of ingredients depending on the brand you use, the seasoning mixture is quite similar to Italian seasoning. It’s different in that it adds lavender which gives it a really nice floral aspect. The herbs de Provence blend I use contains basil, lavender, marjoram, rosemary, sage, savory, and thyme. To our herbs de Provence, we add garlic powder, onion powder, salt, and pepper. We generously coat our chicken with this seasoning mix, and it helps to create an awesome crust and also helps to make this chicken nice and juicy!
How do I make these herbes de Provence chicken leg quarters?
This chicken is amazingly easy to make, but if you don’t tell people, they’ll never guess it! First, I like to sprinkle about ½ of the seasoning mixture evenly onto the bottom of my baking dish. Then when I add the chicken, I press it down to season the bottom of the chicken. The other ½ of the seasoning mix is then simply sprinkled evenly over the top of the chicken. Then comes the butter, plenty of butter! I cut my butter into 8 pieces and top each chicken leg quarter with 2 pieces. Alternately, you can cube your butter and evenly top the chicken with the cubed butter. Last, when baking chicken leg quarters, they’ll be cooked through when the internal temperature reaches 165 degrees. But for this cut of chicken, I like to bake mine until they reach 175-185 degrees. This creates an amazingly tender and juicy chicken!
What are some ways I can serve these herbs de Provence chicken leg quarters?
This is a versatile chicken dish that pairs nicely with many dishes. You can always start your meal with a green salad or a keto soup. One of our favorite salads is a Caesar salad! A side of keto biscuits, cornbread, or English muffins is also a great choice. Any cooked low carb vegetables would be a great accompaniment to this chicken. Some good options include asparagus, broccoli, Brussels sprouts, cauliflower, green beans, and spinach. We also enjoy cooked radishes, both roasted and boiled. Another nice side addition for this chicken would be mashed cauliflower, mashed kohlrabi, or mashed turnips. You could also serve your chicken and mash with some keto chicken gravy! Cooked cabbage dishes are also a nice side for this chicken and coleslaw would be too!

These herbes de Provence chicken leg quarters are tender, juicy, and incredibly flavorful! This is a perfect dish to add to your regular recipe rotation!
Ingredients
- Avocado oil spray
- 2 tablespoons herbes de Provence
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- 4 chicken leg quarters
- 1 stick butter, cut into 1 tablespoon pieces
Instructions
1. Pre-heat oven to 375 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a small bowl, add herbs de Provence, garlic powder, onion powder, salt, and pepper. Stir to combine.
3. Sprinkle ½ seasoning mixture evenly over bottom of baking dish.
4. Place chicken leg quarters, skin side up, into baking dish. Press chicken down to season bottom of chicken.
5. Sprinkle remaining seasoning evenly over top of chicken. Place 2 pieces of butter on top of each chicken leg quarter.
6. Bake for 1-1½ hours, or until internal temperature reaches a minimum of 165 degrees.*

*For optimal taste, flavor, and juiciness, I prefer to bake my chicken leg quarters until they reach 175-185 degrees.
