We start with keto vanilla ice cream. I don’t eat a lot of ice cream and save it for a special treat; but when I do, I read the nutrition labels to check ingredients and the carb count. To our ice cream, we add heavy whipping cream which makes this shake amazingly rich and also helps to keep the carb count down. Then we add peppermint extract to give our shake the perfect amount of minty flavor. Everyone has to choose for themselves, but I don’t mind occasionally adding food coloring to dishes as the amount added is so small. You can absolutely omit this ingredient if you’d like.
How do I make keto whipped cream to top my homemade keto shamrock shake with?
Homemade keto whipped cream is incredibly easy to make and it’s also amazingly creamy and delicious. When you make whipped cream, it’s important to know the mixture will nearly double in size, so you’ll want to use a large enough mixing bowl to account for this. I recommend chilling your mixing bowl and beaters for 15-20 minutes before using. Then to your chilled bowl, you’ll add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. You’ll want to beat this mixture until stiff peaks form. Stiff peaks mean when you remove the beaters, they form peaks which completely hold their shape. You can serve your whipping cream right away or can make it a day or so ahead of time. If you’d like, you can also easily double this recipe!
Is it difficult to make my own keto sugar sprinkles to use as a topping for this homemade keto shamrock shake?
Ok, I have to admit that while I’ve been making homemade keto whipped cream for years, when I made this shake, this was my first attempt at making keto sugar sprinkles. And they turned out amazing! You’ll want to use a small bowl and add 1 tablespoon of keto granulated sugar to it. I used the Swerve brand of sugar to make my sprinkles. You can easily control how dark your sprinkles are by how much green food coloring you add to the sugar. I added 4 drops and ended up with a rich medium green color. I found the best way to get all the sugar colored evenly was to use a small fork to mix the sugar and food coloring together. Then I recommend spreading the colored sugar sprinkles onto a paper towel for a few minutes to allow them to dry.
