Ingredients
- 16 ounces Mexican chorizo
- ½ cup diced onions
- 10 eggs
- ⅓ cup heavy whipping cream
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Optional: Serve with guacamole, salsa, sauteed bell peppers, sliced avocados or jalapenos, or sour cream if desired
Instructions
1. In a large skillet, over medium high heat, cook chorizo with onions until chorizo is cooked through. Remove to a plate.
2. In a medium mixing bowl, add eggs, heavy whipping cream, salt, and pepper. Whisk to combine.
3. Add egg mixture to skillet. Cook over medium heat, stirring frequently, until just set.
4. Add chorizo back to skillet, and stir to combine with eggs.
5. If desired, serve with guacamole, salsa, sauteed bell peppers, sliced avocados or jalapenos, or sour cream.
