We love this instant pot keto chicken bone broth. The nutritional benefits of bone broth are quite impressive; and as a bonus, it is super easy to make your own chicken bone broth. You’ll be amazed at how rich and delicious this broth is!
Let’s talk about bone broth!
Bone broth provides a rich source of amino acids, collagen, gelatin, minerals, and vitamins. The actual amounts of these varies depending on what kind of bones you use, what other ingredients you add, and the method you use to prepare your broth. My preference in making bone broth is to make it in my instant pot. I’ve found this method creates the easiest, quickest, and most delicious broth. This chicken bone broth can be stored in the refrigerator for about 5-6 days or can be stored in the freezer for up to 4-5 months.
What ingredients did you use to make this instant pot keto chicken bone broth?
I made my broth using the carcasses plus some of the skin from 2 medium cooked chickens. Whenever I make a whole chicken or buy rotisserie chicken, I like to use the meat and then put the carcasses into a freezer safe bag and store in the freezer. Then they’re there when I’m ready to make my broth. Water and apple cider vinegar are added to the bones. The vinegar helps to break down the bones and helps to extract the nutrients from the bones and marrow.
The vegetables used in this bone broth include carrots, celery, garlic, and onion. They add both flavor and nutrition to the broth. You can use fresh vegetables or you can save your raw vegetable scraps and freeze them until you’re ready to make your broth. My secret ingredient for this broth is fresh turmeric root! The turmeric provides additional nutritional benefits and helps give this broth awesome color and flavor! Coarse salt and peppercorns are all that is needed to complete this broth!
Let’s talk about how easy it is to make this instant pot keto chicken bone broth!
First, remove the trivet from your instant pot. Next, add your chicken carcasses to the instant pot. Add water to cover your chicken and then add the apple cider vinegar. Allow this mixture to set for 20-30 minutes. Then add your chopped veggies, turmeric, salt, and pepper to the instant pot. You’ll then add more water to reach the fill line. Using 2 chicken carcasses, I used a total of 12 cups of water for my broth. Next, lock the lid in place and set your instant pot to manual high and pressure cook for 120 minutes. Then, you’ll want to do a natural release for about 30 minutes.
When your natural release is finished, carefully turn the vent to release any pressure still in the instant pot. Strain your broth and discard all solids. You may need to strain it twice. I use a large fine mesh sieve to strain mine. Then you can use your broth immediately or place it into a covered container and store in either the refrigerator or freezer. If you don’t use your broth right away, you’ll notice it forms a layer of fat on the top and the rest of the broth turns thick and gelatinous. This is normal. When you reheat the broth, it quickly turns back to a liquid.
What are some ways I can use my chicken bone broth?
This keto chicken bone broth is absolutely delicious simply poured into a mug and served as is! It’s a warm and comforting drink! You can also use this broth in some of your favorite recipes calling for chicken broth. You can add it to your favorite casseroles, sauces, soups, and stews to provide them with incredible flavor and nutrition!

Ingredients
- 2 cooked chicken carcasses
- Water
- 2 tablespoons apple cider vinegar
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 garlic cloves
- 1 small onion, chopped
- 3 pieces turmeric, each cut in half
- 1 tablespoon coarse salt
- 1 tablespoon peppercorns
Instructions
1. Place chicken carcasses into instant pot. Cover with water and add apple cider vinegar. Let set for 20-30 minutes.
2. Add carrots, celery, garlic, onion, turmeric, salt and pepper.
3. Add additional water to reach max fill line.
4. Set instant pot to manual high and pressure cook for 120 minutes. Natural release for 30 minutes.
5. Strain the broth, discarding solids.
6. Store, covered, in the refrigerator for 5-6 days or store in a freezer safe container, in the freezer for 4-5 months.
