Ingredients
- 2 tablespoons avocado oil
- 6 bone-in, skin on chicken thighs
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 cup mushrooms, sliced
- ¼ cup onion, diced
- ¼ cup red pepper, diced
- 28 ounce can crushed tomatoes
- 4 garlic cloves, minced
- ⅓ cup chicken broth
- 2 tablespoons tomato paste
- 1 teaspoon basil
- 1 teaspoon granulated sugar substitute (Swerve)
- ½ teaspoon oregano
- ½ teaspoon paprika
- ¼ teaspoon rosemary
- 1 teaspoon xanthan gum
- 1 cup black olives
Instructions
1. Turn instant pot on to saute. Add avocado oil.
2. Season chicken with salt and pepper.
3. Saute chicken thighs for 2 minutes. Flip and saute other side another 2 minutes. Work in batches, sauteing 3 thighs at a time. Remove chicken and set aside.
4. Add mushrooms, onion, and red pepper to instant pot. Saute for 2 minutes, stirring frequently.
5. Use a spoon to scoop out vegetables and set aside.
6. In a large mixing bowl, combine crushed tomatoes, garlic, chicken broth, tomato paste, basil, sugar, oregano, paprika, and rosemary. Stir to combine.
7. Place chicken back into instant pot. Top with vegetables. Pour tomato mixture over chicken and vegetables.
8. Set instant pot to manual high and pressure cook for 15 minutes. Natural release for 15 minutes.
9. Remove chicken from instant pot and set aside. Turn instant pot to saute and add xanthan gum. Whisk to combine. Add olives. Saute, stirring frequently, for 1-2 minutes or until mixture has thickened.
10. Add chicken back to instant pot. Coat with sauce.
11. Serve immediately.
