I have a go-to homemade keto Italian dressing which I use for a dressing for green salads and any dish calling for Italian dressing. My homemade dressing combines olive oil and white wine vinegar with Dijon mustard and a variety of herbs and spices. The addition of freshly grated Parmesan cheese takes it over the top with flavor! You can use any keto Italian dressing you’d like for your marinade. Just check your ingredients as they vary greatly from brand to brand. We marinate our chicken in 2 cups of Italian dressing. When ready to bake, we pour 1 cup of the dressing over the chicken and discard the rest.

This is an incredibly easy dish to make, but results in amazingly juicy and delicious chicken! You have a couple of options for marinating your chicken. You can place your chicken in a large container and pour the dressing over the chicken. If the dressing doesn’t cover the chicken completely, you can turn the chicken once or twice while marinating or simply tilt the container a few times to coat the top of the chicken. The other way to marinate your chicken is to combine the chicken with the dressing in a large resealable plastic bag. I like to let my chicken marinate 4 hours or overnight, but you’ll still get amazing flavor if you only have time to marinate for 1-2 hours. When ready, you’ll want to bake your chicken with 1 cup of the marinade until the internal temperature of the chicken reaches 165 degrees.

Ingredients
- 4 chicken leg quarters
- 2 cups keto Italian dressing
Instructions
1. Place chicken leg quarters into a large container or resealable plastic bag.
2. Pour 2 cups keto Italian dressing over chicken.
3. Marinate in refrigerator 1-2 hours, or overnight. If marinating in a large container, turn chicken once or twice.
4. When ready to bake, pre-heat oven to 350 degrees.
5. Place chicken into a 13x9 inch baking dish. Pour 1 cup of marinade over chicken. Discard remaining marinade.
6. Bake for 50-70 minutes, or until internal temperature reaches a minimum of 165 degrees.
