Every layer in this dip is full of incredible flavors. The guacamole for this dip is a simple recipe using only 3 ingredients. We simply mash 3 medium avocados with some lime juice and salt. It is a quick and easy guacamole you can make while your taco meat cools for this dip. If you’d like to use store bought guacamole, use about 1½ cups. I wanted to add a little zip to the sour cream layer, and a little taco seasoning was the answer!

I chose the toppings for this dip based upon what my family loves! The ingredients are also colorful and make this dish beautiful! First, we add shredded cheddar cheese and lots of it! I like to shred my own because I like the consistency of it, and I know there are no added ingredients which are often found in pre-shredded cheeses. You can use a mild, medium, or sharp cheddar. Colby jack or even pepper jack, if you’d like an extra kick, could be substituted. I love the look, taste, and texture of using diced and seeded tomatoes for this dip. Next, we top the dip with some sliced black olives. Some chopped green onions are the final touch for this awesome dip!
How do I make this keto 7 layer taco dip and what can I serve with it?
This dip is easy to make. It takes some time since we’re using fresh ingredients and taking the time to make our own taco seasoning and guacamole. But it is well worth the extra time and energy to do so! I do have a couple tips for making this dip. First, allow your taco meat to cool before building your layers. Next, when I add my guacamole, I drop spoonfuls of it over the taco meat. Then I use a spatula to carefully spread the guacamole over the meat. This helps keep the layers from getting mixed together. I do the same with my sour cream. Last, this dip can be served immediately or can be refrigerated for an hour or two, or overnight, before serving.
There are some awesome and delicious low carb, keto option for dippers for this dish. You can use your favorite low carb vegetables as dippers. Some great options include broccoli, cauliflower, celery, cucumbers, peppers, and radishes. You can also use your favorite keto crackers or chips for this dip. Ingredients
For the Taco Seasoning:
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon pepper
- ¼ teaspoon oregano
For the dip:
- 16 ounces ground beef
- ¼ cup hot water
- 2 tablespoons taco seasoning
- 3 medium avocados
- 1 teaspoon lime juice
- ½ teaspoon salt
- 1 cup sour cream
- 2¼ teaspoons taco seasoning
- 1½ cups shredded cheddar cheese
- ½ cup diced, seeded tomatoes
- ½ cup sliced black olives
- 3 tablespoons chopped green onions
Instructions
For the taco seasoning:
1. In a small bowl, add all seasoning ingredients. Stir to combine. Set aside.
For the dip:
1. In a large skillet over medium high heat, cook ground beef until no longer pink, breaking up into small pieces as it cooks.
2. Drain fat from meat. Add water and 2 tablespoons taco seasoning to ground beef. Stir to combine ingredients. Saute, over medium heat, for 2-3 minutes. Remove from heat and set aside to cool.
3. In a medium mixing bowl, add avocados, lime juice, and salt. Mash until mixture is smooth and all ingredients are combined. Set aside.
4. In a small mixing bowl, add sour cream and taco seasoning. Sir to combine. Set aside.
5. In an 11x7 inch glass baking dish, add cooled taco meat. Spread out to evenly coat baking dish.
6. Top with guacamole, spreading evenly over taco meat.
7. Top with sour cream mixture, spreading evenly over guacamole.
8. Sprinkle with shredded cheese, diced tomatoes, sliced olives, and green onions.
9. Serve immediately, or refrigerate in a covered container 1-2 hours or overnight before serving.

I used 93% lean ground beef for this dip.
