What kind of almond butter should I use for this recipe?
There are many brands of almond butter that are keto. Read your nutritional labels closely to make sure there is no added sugar in the almond butter. I like the ones that contain only almond butter or that contain almond butter and salt. If you use an almond butter that contains salt, you don’t need to add any additional salt to this recipe. If your almond butter doesn’t contain salt, just add ¼ teaspoon to the fudge mixture.
What kind of chocolate chips are best for this keto almond butter fudge recipe?
I recommend using semi-sweet keto chocolate chips for this recipe. Semi-sweet chips contain a great amount of sweetness that blends well with the almond butter. You can use dark chocolate if you’d like a less sweet fudge. I used Lily’s brand semi-sweet chocolate chips for my fudge.
Are there any tips for making this keto almond butter chocolate fudge?
There are a few things you can do to ensure you get a creamy, rich, and perfect fudge! Line your pan with parchment paper to cover the bottom and up the sides of the pan. You can then even lift the entire piece of fudge out of the pan to make cutting it easier and to keep from scratching your pan when you cut the fudge. Second, microwave your mixture at 30 second intervals and stir after each interval. Your mixture is done when all the chocolate chips are melted, and your mixture is smooth. Third, freeze your fudge for an hour to ensure it is completely set before serving.
