We use both ground chicken and andouille sausage for this chili. The flavors and textures of the meats work great together and help to create a beautiful and tasty dish. For my chicken, I used a lean chicken mixture made from chicken breast. Some mixtures use white and dark meat and are not as lean. You can use whatever ground chicken mixture you’d like for your chili.
Andouille sausage is made from pork. It is smoked and, unlike many other sausages which are made from ground meat, andouille is made with chopped pork, which gives it a chunkier texture. It is usually seasoned, depending on the brand you buy, with garlic, onions, and dry seasonings. Again, the seasonings will vary depending on the brand you use; but often include cayenne, paprika, and thyme. Andouille is a staple used in many Cajun recipes. I think you’ll love the deep smoky seasoned flavor found in andouille, but if you can’t find it, you can substitute kielbasa, Spanish chorizo, or your favorite smoked sausage.

Our meats and seasonings of salt, pepper, chili powder, and cumin are naturally low carb and add awesome flavor to this chili. The addition of diced green and red peppers plus a small amount of diced onions bring color, flavor, and texture, while keeping the carb count low. Then diced tomatoes and Rotel diced tomatoes and green chilies bring even more flavor, spice, and texture to our chili. If there is a secret ingredient in this chili, it’s the riced cauliflower. If you don’t tell people, they won’t know what makes this chili extra special. But the addition of the riced cauliflower brings that special textural element that really takes this chili over the top. You can top your chili with some shredded cheese, sour cream, or some additional diced onions if you’d like.

Ingredients
- 1 pound ground chicken
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 14 ounces andouille sausage, sliced
- ½ cup diced green peppers
- ½ cup diced red peppers
- ¼ cup diced onion
- 1 (28 ounce) can diced tomatoes
- 1 (10 ounce) can Rotel diced tomatoes and green chilies
- 2 (14 ounce) cans beef broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 10 ounces riced cauliflower
Instructions
1. In a medium skillet, cook ground chicken, salt, and pepper until no longer pink, breaking up into pieces while cooking. Drain the grease. Set aside.
2. In a large stockpot, over medium high heat, add sausage, diced peppers and onions. Saute until vegetables start to soften and sausage browns, about 7-8 minutes.
3. Add ground chicken, diced tomatoes, Rotel, beef broth, chili powder, cumin, salt, and pepper. Stir to combine.
4. Increase heat to high and being mixture to a boil. Decrease heat to medium and simmer for 15 minutes, stirring occasionally.
5. Add riced cauliflower and simmer for an additional 10-15 minutes, or until rice is tender.
