Do you remember the old rice krispies treats commercial where the mom quickly made the dessert, then sat in the kitchen reading and relaxing? At the last minute, she then threw some flour on her face and clothes to make it appear as if she had slaved for hours making the dessert. This keto antipasto salad will bring back those memories because it has incredible depth of flavor and people will think you worked long and hard on it. It can be your little secret how quick and easy this recipe comes together!
Let’s talk about the dressing for this keto antipasto salad!
The dressing for this salad is an amazingly simple yet very tasty vinaigrette. I love to learn about foods and about all things cooking and baking, so I thought it would be fun to talk about the difference between dressings and vinaigrettes. All vinaigrettes are considered dressings while all dressings are not vinaigrettes. Basically, a vinaigrette is a mixture containing an oil and an acidic ingredient along with some spices. The oil is often olive oil. For keto recipes, avocado oil would be a great choice as well. The acidic component is usually either lemon juice or a vinegar. Dressings, on the other hand, cover a much wider variety of mixtures. They frequently have as their base a creamy ingredient such as mayonnaise, yogurt, or buttermilk. The vinaigrette for this keto antipasto salad contains just a few simple ingredients. But that is all needed since the salad ingredients all have unique tastes and some are quite salty. This vinaigrette mixes with the salad ingredients to create a perfect balance of flavors.
