Let’s talk about eggs!
Eggs are such an awesome food and a super keto choice. I grew up on a dairy farm in Wisconsin, but we never raised chickens. My grandma, however, did and she always provided us with farm fresh eggs! Eggs are low in carbs but amazingly rich in nutrients. One of the greatest things about eggs, apart from being so delicious😊, is the variety of ways you can cook them. Eggs can be baked, boiled, fried, poached, or scrambled. When preparing eggs, you can also choose the exact doneness you’d like. I think everyone in my family likes their fried eggs cooked differently! For this appetizer, of course, we’re using hard boiled eggs. I love having hard boiled eggs in the fridge, and when making a small batch, I make them using my Dash rapid egg cooker. But when making a larger batch, I usually cook them on the stovetop.
What other ingredients go into these keto appetizer egg bites?
Besides our hard boiled eggs, we only add a few simple but amazingly flavorful ingredients to make these egg bites. For our meat and cheese, I used no sugar added salami and colby jack cheese. If you’d like to make a meat substitution, you could use bacon, fried to your desired crispness level, pepperoni, or even prosciutto. If you use bacon, you can cut a cooked piece in two, then add one or two pieces to your bites. For cheese, you could substitute with cheddar, gouda or smoked gouda, gruyere, mozzarella, provolone, or Swiss, just to name a few. If you want to add a little heat, you could also substitute with pepper jack cheese. I used the Chosen Foods brand avocado oil mayonnaise for my bites, but you can use your favorite brand for yours. After assembling these bites, I simply sprinkle a little salt and pepper over them.
Are these keto appetizer egg bites difficult to make?
These bites are quite easy to make, but there are a few things you can do to ensure yours turn out perfectly. First, you’ll want to cut your eggs in half lengthwise, then set each half on a plate or platter. I spread about ½ teaspoon of mayo over half of the cut eggs. To the other half, you’ll want to fold your salami in half and place it on the egg, then top it with a slice of cheese. Next, when placing a mayo topped egg on top of each bite, I like to secure my bites with an appetizer toothpick, but a small bamboo skewer would work great as well. You can either eat these bites as they are or can cut them in half if you’d prefer. Last, you can serve these bites immediately or can make them ahead of time and store them in the refrigerator.

Ingredients
- 12 hard boiled eggs
- 2 tablespoons keto mayonnaise
- 12 slices salami
- 3 ounces colby jack cheese, cut into 12 pieces
- Salt and pepper
Instructions
1. Cut eggs in half lengthwise and set onto large plate or serving platter, yolk side up.
2. Spread ½ teaspoon of mayonnaise onto half of the eggs. Set aside.
3. For remaining eggs, top each with 1 piece of salami folded in half, then with 1 piece of cheese.
4. Top each with a set aside egg half and secure each bite with an appetizer toothpick or small skewer.
5. Sprinkle egg bites with salt and pepper.
