To cook cauliflower, you can boil, grill, roast, saute, or steam it. You can also rice cauliflower and serve it in all kinds of dishes as a low carb rice option. For this dish, we’re roasting our cauliflower. You’ll want to chop your cauliflower into bite sized pieces, then toss it in a simple mixture of butter, salt, and pepper and roast until it’s fork tender. I line my baking sheet with parchment paper to make clean up a breeze!
How do I make the cheese sauce for this keto bacon cauliflower mac and cheese?
This cheese sauce is amazingly creamy and cheesy. It’s also quite easy to make. I start my sauce while my cauliflower is roasting. In a saucepan, you’ll combine heavy whipping cream with softened and cubed cream cheese, smoked paprika, dry mustard, garlic powder, and onion powder. Then heat and stir or whisk occasionally until the cream cheese is completely melted and your mixture is smooth. You’ll then add your cheese. I recommend buying a block of cheese and shredding it yourself. This melts the absolute best. I used cheddar cheese for this dish, but you could substitute with any good melting cheese. Some great options include colby, gruyere, havarti, Monterey jack, mozzarella, provolone, regular or smoked gouda, or Swiss cheese. You’ll want to stir or whisk the sauce until the cheese is melted and the sauce is smooth. Then you’ll simply stir in the bacon and your sauce is ready!

Ingredients
- 1 large head cauliflower, chopped
- 3 tablespoons butter, melted
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup heavy whipping cream
- 3 ounces cream cheese, softened and cubed
- 1 teaspoon smoked paprika
- ½ teaspoon dry mustard
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 cups shredded cheddar cheese
- 8 slices bacon, fried and crumbled
- Avocado oil spray
Instructions
1. Pre-heat oven to 425 degrees. Line a large baking sheet with parchment paper.
2. Toss cauliflower with melted butter, salt, and pepper. Place cauliflower onto prepared baking sheet.
3. Roast cauliflower for 15-20 minutes, or until fork tender.
4. While cauliflower is roasting, make cheese sauce. In a medium saucepan, over medium heat, add heavy whipping cream, cream cheese, smoked paprika, dry mustard, garlic powder, and onion powder. Stir or whisk until cream cheese is melted and mixture is smooth.
5. Add shredded cheese and stir or whisk until cheese is melted and mixture is smooth. Stir in cooked bacon.
6. Once cauliflower is roasted, remove from oven and decrease heat to 350 degrees.
7. Spray an 11x7 inch baking dish with avocado oil spray. Spread roasted cauliflower evenly into baking dish. Pour cheese sauce over cauliflower and stir to combine.
8. Bake for 20 minutes or until heated through.
