We enjoy chicken fajitas, so I thought I’d make a fun variation by using chicken thighs. This chicken was a big hit at my house! The homemade fajita seasoning is our go-to, so you’ll really get two recipes with this! I hope you’ll enjoy this dish as much as my family does.

When making traditional chicken fajitas, some people prefer using chicken breasts while others prefer using chicken thighs. Both options use boneless and skinless chicken. For this dish, we’re using bone-in and skin on chicken thighs. I love this cut of chicken! We do stick with tradition and add sliced bell peppers and sliced onions. I love using a combination of different colored peppers for fajitas. For this dish I used a green, orange, and red bell pepper. You can use any color or color combination you’d like. I used a yellow onion, but a purple or white onion would also work just fine. To help coat our chicken and vegetables in the fajita seasoning, we first toss them in a little olive oil.

It’s amazingly quick and easy to make your own fajita seasoning! It’s also delicious! If you check ingredients on most packaged fajita seasoning mixes, you’ll find ingredients such as caramel color, corn starch, corn syrup solids, maltodextrin, potato starch, rice flour, soy protein, sugar, and wheat gluten. When you make your own, you can avoid all of those! For my homemade keto fajita seasoning mix, I combine 1 tablespoon chili powder, 1 teaspoon cumin, garlic powder, keto granulated sugar, and paprika, ½ teaspoon onion powder, oregano, and salt, and ¼ teaspoon cayenne and black pepper. This is a mild seasoning mix. If you’d like more heat, you can add more cayenne to yours. You can also double or triple this or even make a big batch of it. Just store it in an airtight container and you’ll have some whenever you’d like!
How can I serve these keto baked fajita chicken thighs?
This dish is delicious and filling and can make for a meal in itself. I topped some of our chicken with some shredded cheese and sour cream. Yum! Some other great topping options would be diced tomatoes, guacamole or sliced avocado, salsa, shredded lettuce, sliced jalapenos, or sliced olives. You could serve your fajita chicken thighs with a green salad with all your favorite salad toppings. For a fun and quick dressing, you can mix even parts sour cream and salsa! This dish could also be served with coleslaw. Some other great sides for this dish would include cilantro lime cauliflower rice or Mexican cauliflower rice. You could even serve a side of vegetables with this dish if you’d like.

Ingredients
- Avocado oil spray
- 4 pounds bone-in skin on chicken thighs
- 3 medium bell peppers, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 3 tablespoons keto fajita seasoning
Instructions
1. Pre-heat oven to 375 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a large mixing bowl, combine chicken thighs, peppers, and onions.
3. Drizzle olive oil over chicken, peppers, and onions. Toss to coat with oil.
4. Sprinkle fajita seasoning over chicken, peppers, and onions. Toss to coat with seasoning.
5. Add chicken, peppers, and onions to prepared baking dish.
6. Bake for 45-60 minutes, or until chicken reaches 165 degrees.
