Chimichurri is a sauce which originated in Argentina. Many years ago, I went on an amazing vacation with my mom and oldest brother. It was a group tour to Brazil, Argentina, and Chile. I have amazing memories of seeing Iguazu Falls in Brazil, the quaint lodge we stayed at in the middle of the rain forest in Chile, the beaches in Rio de Janeiro, and the amazing food we had in Buenos Aires. Our breakfast spread included all kinds of meats, cheeses, breads, egg dishes, fruits, salads, pastries, and amazing desserts. It was impressive! Oh, yes…back to chimichurri! Chimichurri is an uncooked herb-based sauce usually made with parsley, olive oil, white wine vinegar, garlic, and seasonings. There is also a spicier red chimichurri sauce often made by adding paprika, chilies, and cayenne pepper. Of course, there are many variations to both green and red chimichurri sauces.

Although traditional chimichurri is made using parsley, I had some excess basil, so this is my basil cilantro version of chimichurri! The combination of basil and cilantro creates some truly amazing flavor. Then we add some garlic. I peel and then smash mine to help ensure they’ll get blended evenly in the sauce. We then add some olive oil and white wine vinegar. To that we add dried oregano, salt, keto sugar, pepper, and red pepper flakes. The spice level of this sauce is mild. If you’d like more spice, you can add more red pepper flakes. You can serve this sauce right away or refrigerate it until ready to use. When refrigerating, you’ll want to let your sauce set out and bring it to room temperature. The olive oil will solidify in the refrigerator and will return to its liquid state when it sets out.
How can I serve this keto basil cilantro chimichurri?
You have some amazing options for serving this chimichurri. I’m sure you’ll think of more, but here are a few suggestions. You can serve this as a dip for your favorite keto bread, crackers, raw vegetables, cheese whisps, or pork rinds. You can use this as a marinade for all kinds of meats. Serve it over cooked meats such as steaks, chicken, pork, and seafood for a fresh new meal idea. You can also drizzle this sauce over cooked vegetables. This chimichurri also can be drizzled over eggs, cooked however you like them best! You can drizzle some of this over soups or use it as a salad dressing. Another great option is to top your burgers, sandwiches, or wraps with some of this sauce. If you’d like a creamy option, you can combine a little chimichurri with some keto mayonnaise.

Ingredients
- 1 cup basil leaves, packed
- ½ cup cilantro leaves, packed
- 2 garlic cloves, smashed
- ½ cup olive oil
- 3 tablespoons white wine vinegar
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon granulated sugar substitute (Swerve)
- ⅛ teaspoon pepper
- ⅛ teaspoon red pepper flakes
Instructions
1. Add all ingredients to a blender.
2. Blend until smooth, or to desired consistency, scraping down sides of blender with spatula if necessary.
3. Serve immediately, or store in the refrigerator until ready to serve.
4. If refrigerated, allow to come to room temperature before serving.
