You’ll get rave reviews every time you serve this delicious keto bbq ranch cauliflower lettuce salad! This salad has both awesome flavor and texture. We combine cauliflower and lettuce, toss it in a barbecue ranch dressing, then top it with lots of cheese and bacon. You can make this ahead of time as well!
Let’s talk about our cauliflower and our lettuce!
Cauliflower and lettuce are both great keto food choices as they are both incredibly low in carbs. And although your first thought may not be to pair then together in a salad, they really make for a winning combination in this salad. Although white cauliflower is most commonly found, cauliflower can also be green, orange, or purple. I actually used green cauliflower for my salad because it’s so pretty. Its taste is quite similar to white cauliflower and you probably wouldn’t notice a difference, except in color, from white. You can use any color of cauliflower for this salad. I used iceberg lettuce for this salad. It’s nice and crunchy and keeps its crunch better than some lettuce types. If you’d like, you could substitute with Romaine lettuce for your salad. I chopped my lettuce, but you could shred yours if you’d prefer.
What other ingredients go into this keto bbq ranch cauliflower lettuce salad?
We toss our cauliflower and lettuce in a barbecue ranch dressing. The dressing is made by combining keto ranch dressing, keto barbecue sauce, and smoked paprika. I used homemade keto ranch dressing, but you can use any keto ranch dressing. I love making homemade since it’s delicious and I can be assured there are no unwanted ingredients in it. When buying dressing, you’ll want to read nutritional labels to ensure there is no added sugar, oils, or ingredients you don’t want. The same goes for your barbecue sauce. You can use homemade barbecue sauce or your favorite keto brand. The toppings for our salad consist of just two simple but delicious ingredients. First, we top our salad with shredded cheddar cheese. I recommend buying a block of cheese and shredding it yourself. We then top our salad with a whole pound of fried and crumbled bacon.🥓Yum!
