This keto beef and black bean casserole comes together in just 45 minutes and is both incredibly flavorful and incredibly low in carbs. It’s also creamy and cheesy and is true comfort food. We use black soy beans to keep our dish low in carbs; but they bring awesome flavor and texture to this dish!
Let’s talk about our beef, peppers, and onions!
I used a 90% lean ground beef mixture to make this dish. Alternately, you could use a leaner or fattier ground beef mixture for yours. Whichever beef mixture you use, you’ll want to drain the grease well after cooking. If you’d like, you could also substitute with ground pork or Italian sausage to make this dish. You could even use ground chicken for a fun change-up to this casserole. For the bell peppers, I used a combination of green and red bell peppers to make my casserole. I love this flavor and color combination, but you can use any color or color combination of bell peppers to make this dish. For the onion, I used a yellow onion, but a white onion would work great as well. We also add a little salt and pepper when cooking our beef, peppers, and onions.

Although most beans are too high in carbs to be included in a low carb plan, black soy beans are one of the exceptions. Black soy beans are relatively low in carbs, with ½ cup containing 5 net grams of carbs. In comparison, ½ cup regular black beans contains 13 net grams of carbs. I use soy beans in moderation when cooking, but they’re great in dishes like this or added to chili. We then add salsa and sour cream to add amazing flavor and creaminess to this dish. You can use mild, regular, or hot salsa depending on how spicy you’d like your dish to be. After transferring this mixture to a baking dish, we finish it off by topping it with shredded mozzarella cheese. You can substitute with any good melting cheese; but for the best results, I recommend buying a block of cheese and shredding it yourself.

This is a filling dish and can be served as a complete meal all in itself. You also have some great low carb options for serving this casserole. You can start your meal with a green salad, perhaps a Caesar salad or a wedge salad. I love to cut up some iceberg or romaine lettuce, then serve it with our favorite salad toppings. Some of our go-to toppings include chopped hard boiled eggs, diced cucumbers and tomatoes, fried and crumbled bacon, and shredded cheese. Ingredients
- Avocado oil spray
- 1 pound ground beef
- ½ medium green pepper, diced
- ½ medium red pepper, diced
- ½ small onion, diced
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 (15 ounce) can black soy beans
- ½ cup salsa
- ½ cup sour cream
- 1½ cups shredded mozzarella cheese
Instructions
1. Pre-heat oven to 375 degrees. Spray an 11x7 inch baking dish with avocado oil spray. Set aside.
2. In a large skillet over medium high heat, add ground beef, diced peppers, diced onions, salt, and pepper. Cook until beef is cooked through. Drain grease.
3. Add black soy beans, salsa, and sour cream. Stir to combine. Simmer for 5 minutes. Transfer to prepared baking dish. Sprinkle shredded cheese evenly over casserole.
4. Bake for 30 minutes. Let set 5 minutes before serving.
