We use black soybeans in place of regular black beans and the result is an incredibly flavorful salsa which will be a hit every time you serve it. I love using fresh ingredients to make dishes, and this salsa is full of amazingly fresh ingredients! Our salsa starts with fresh tomatoes. I used Roma tomatoes, also known as plum tomatoes, to make this salsa. Roma tomatoes give our salsa a nice touch of sweetness. You can also use vine ripened tomatoes to make this dish. Vine ripened tomatoes will add additional juiciness to your salsa. For onions, I added diced red onions as they add amazing flavor and color to this salsa. If you’d like, you can substitute with yellow onions to make your salsa. I love cilantro and I used fresh chopped cilantro to make my salsa. You can add even more than ¼ cup of fresh chopped cilantro if you’d like. For the garlic, I added 2 minced garlic cloves. You can add more garlic if you’d like.
What other ingredients go into this keto black bean salsa?
Although most beans are too high in carbs to be included in a low carb keto plan, the great news is that black soy beans are a wonderful exception. Black soy beans are relatively low in carbs, with ½ cup containing only 5 net grams of carbs. In comparison, ½ cup regular black beans contains 13 net grams of carbs. I use soy beans in moderation when cooking, but they’re an amazing option in dishes like this or for an awesome addition to chili. We also add lime juice, chili powder, and salt to our salsa. I love the addition of fresh lime juice, but you can use bottled lime juice if you’d prefer. As written, this is a mild salsa. If you’d like to increase the heat of your salsa, you can add fresh diced jalapenos or hot chili powder or some of your favorite hot sauce.

You can also use cheese whisps, keto crackers, and pork rinds as dippers. For a fun change up, I also like to use sliced cheese and meats such as pepperoni and sausage for dippers. You can serve this salsa alongside meats and all kinds of cooked eggs and egg casseroles or quiches. Although we are calling this salsa, you can serve this dish as a delicious side salad as well.
