In just 15 minutes, you can make this decadent keto blackberry raspberry mousse! Enjoy!
I love delicious, quick, and easy desserts; and this keto blackberry raspberry mousse is all of those and more! You don’t have to give up on rich and creamy desserts when doing a low carb keto plan, and this mousse is a great example of that. This mousse is perfectly sweet and fruity. If you’d like, you can also top this mousse with some homemade keto whipped cream. That’s how we like ours!
Let’s talk about our berries!
There are many fruits that are high in carbs and therefore not keto. The great news is that most berries, in moderation, are a good keto food option. For our mousse, we are using blackberries and raspberries. One cup of blackberries contains about 6 net grams of carbs and one cup of raspberries contains about 7 net grams of carbs. For comparison, one cup of strawberries comes in at about 7-8 net grams of carbs. Both blackberries and raspberries are low-calorie foods which provide us with some important nutrients. They provide a source of folate, iron, magnesium, manganese, potassium, and vitamins C, E, and K. They’re also a good source of fiber. I used fresh berries for my mousse, but you can use frozen if you’d like. If you use frozen, you’ll want to thaw your berries before adding them to your mousse.
What other ingredients go into our keto blackberry raspberry mousse?
The creamy base for our mousse starts with cream cheese. To this we add keto powdered sugar. I used the Swerve brand. It contains zero calories and zero net carbs; and it’s delicious. Another great thing about this brand is that it is a one-to-one substitution for regular sugar. This means we use the same amount of Swerve sugar as we would regular sugar because their level of sweetness is remarkably similar. It’s amazing how much flavor a little vanilla brings to dishes, so I like to add some, plus a little salt to this mousse. Our last ingredient is heavy whipping cream. For some desserts, I beat the whipping cream to stiff peaks before adding to the dessert. But for this mousse, it works perfectly well to just add it at the end and beat it for 2-3 minutes to thicken it.
How do I make homemade keto whipped cream to go with my keto blackberry raspberry mousse?
It is incredibly easy to make your own keto whipped cream. And, once you do, you’ll never want anything else! It is creamy and delicious, and you can decide how sweet you’d like yours. I recommend chilling your mixing bowl and beaters in the freezer for 15-20 minutes before using. Then, to your chilled bowl, add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. You’ll want to beat your mixture until stiff peaks form. This means when you remove the beaters, they form peaks which completely hold their shape. You can give your whipped cream a taste and add more powdered sugar if you’d like. This recipe can also easily be doubled so you can always have a quick sweet treat in the refrigerator!
