We start with fresh tomatoes. I had made a trip to one of my favorite local markets, so I had a variety of tomatoes to use up. You can really use most any tomato you’d like. Vine ripened tomatoes are one of my favorites because they’re so juicy, but plum tomatoes are a great option too. We then add cilantro, onion, and an Anaheim and jalapeno pepper. I chose this combination of peppers to get a nice heat level for this salsa. We then add fresh lime juice and garlic. The lime juice adds an amazing zesty taste to our salsa. If you’d like a more garlicky salsa, you can add more garlic to your salsa. We then add chili powder, cumin, keto sugar, salt, and pepper. The sugar balances out the flavors in this salsa and cuts the acidity of the tomatoes.
How can I control the heat in this keto blender salsa?
I consider this salsa to be mild to medium. But you can easily adjust the heat level to make this anywhere from very mild to very spicy! First, you can use mild or hot peppers for your salsa. Anaheim peppers are generally milder than jalapenos. You could also use hotter peppers if you’d prefer. Since most of the heat in peppers is found in the seeds and membranes, you can also increase the heat level by adding some to your salsa. If you want a very mild salsa, you can leave out the peppers altogether. Another way to adjust the heat level in this dish is to add more chili powder or to add some cayenne pepper or red pepper flakes. You could even add some of your favorite hot sauce to increase the heat level even more!
How can I serve this keto blender salsa?
You have some great keto options for serving this salsa. As a dip, you can serve this salsa with some cheese whisps, pork rinds, keto crackers, or keto chips. Another great option is to serve raw vegetables as dippers for this salsa. Some good options include broccoli, cauliflower, celery, cucumbers, or sliced bell peppers or radishes. Ingredients
- 3 pounds tomatoes, chopped
- ½ cup chopped cilantro
- ½ cup chopped onion
- 1 Anaheim pepper, seeded, membranes removed, chopped
- 1 jalapeno pepper, seeded, membranes removed, chopped
- Juice of 1 lime
- 2 garlic cloves, chopped
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon granulated sugar substitute (Swerve)
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. Add all ingredients to a blender.
2. Pulse until smooth, or to desired consistency.
3. Enjoy!
Notes
*If all your ingredients don’t fit into your blender, just add as much as fits, pulse until blended, then add the remaining ingredients and pulse again to desired consistency.
