It’s easy to boil a whole chicken and use either the white or dark meat, or a combination of both, to create some awesome tasty dishes. You can grill, roast, or sauté chicken to create a delicious option as well. A store-bought rotisserie chicken is a good quick choice too!

Bacon, lettuce, and tomato go so incredibly well together. This combination can also be added to any number of dishes such as to this awesome low carb keto chicken salad. You can make your bacon in the oven or fry it. For recipes like this one, I like to first cut my bacon with kitchen scissors, then fry it in a skillet over medium heat. I used a large roma tomato. I chose to remove the seeds and insides for this recipe. I used iceberg lettuce in this dish. You can use any lettuce you’d like. You could also use fresh spinach if you’d prefer.

The combination of flavors in this dressing is one my family loves. We find it to be the perfect blend of creamy and savory with just a subtle hint of sweetness. I love to use fresh lemon juice whenever possible. I juice a lemon and try to always have some in the fridge ready for use! I used dried chives, but you could use fresh chives. Just remember you’ll need to use more if you use fresh. If you use dried chives, add 1 teaspoon. If you use fresh chives, add 1 tablespoon.

Ingredients
- 4 cups chicken, cooked and chopped
- 1 stalk celery, chopped
- 1 tablespoon diced onions
- 8 ounces bacon, fried and crumbled
- 1 cup chopped lettuce
- ½ cup diced tomatoes
- ⅓ cup keto mayonnaise
- ¼ cup sour cream
- 1 tablespoon brown sugar substitute (Swerve)
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried chives
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large mixing bowl, combine chicken, celery, onions, bacon, lettuce, and tomatoes. Stir to combine.
2. In a small mixing bowl, combine remaining ingredients. Stir to combine.
3. Pour dressing over chicken mixture. Stir to completely combine. Serve immediately or chill in the refrigerator until ready to serve.
