Ingredients
- 8 slices raw bacon, chopped
- ½ cup diced onion
- 1 cup chicken broth
- 2 tablespoons apple cider vinegar
- ½ tablespoon granulated sugar substitute (Swerve)
- 1½ teaspoons caraway seeds
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 medium head green cabbage, chopped
- ½ head red cabbage, chopped
Instructions
1. In a large stockpot, over medium high heat, cook bacon to desired crispness. Add diced onion during last minute of cooking.
2. Add chicken broth and increase heat to high. Stir and scrape bottom of stockpot to de-glaze.
3. Add apple cider vinegar, sugar, caraway seeds, salt, and pepper. Stir to combine.
4. Add green and red cabbage. Stir to combine. Cover mixture. Decrease to medium low heat and braise for 30 minutes. Stir at halfway point.
5. Serve immediately.
