I used canned green chiles to make this dish. Canned green chiles are usually Anaheim chiles. Anaheim peppers are fairly mild in their heat level. A good thing to know about peppers is that most of their heat is found in the seed and membranes. So, if you want a milder dish, you can remove the seeds from your chiles. Hatch green chiles are typically hotter than regular chiles, so you can use them if you’d like more heat. If you’d like to roast your own chiles, you can roast them directly on the stovetop, broil them in the oven, or grill them. Whichever method you use, after getting them nice and charred on all sides, you’ll want to steam them in a plastic bag for about 10 minutes. At this point, you can easily remove the charred skin and use them to make these green chile squares!

I used pork breakfast sausage for my dish. This is pork that’s been seasoned with salt and a variety of spices. Some brands add sugar to the pork, so you’ll want to read your nutrition labels when buying. You can also use Italian sausage to make this dish if you’d prefer. If you’d like, you can also easily make your own breakfast sausage mixture! To our sausage, we add diced red peppers and diced red onions. You can use any color of pepper and onion for this dish. I used cheddar cheese to make my chile squares, but any good melting cheese can be used. I do recommend you buy a block of cheese and shred it yourself as it tastes and melts the best. For our egg mixture, we combine eggs, heavy whipping cream, garlic powder, ground mustard, paprika, salt, and pepper.

Ingredients
- Avocado oil spray
- 1 pound pork breakfast sausage
- ½ medium red pepper, diced
- 3 tablespoons red onion, diced
- 3 (7 ounce) cans whole green chiles, drained
- 2 cups shredded cheddar cheese
- 6 eggs
- ½ cup heavy whipping cream
- ½ teaspoon garlic powder
- ½ teaspoon ground mustard
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a medium skillet, over medium high heat, saute sausage, peppers, and onions, until sausage is browned and cooked through. Drain grease.
3. Cut chiles so you can lay them flat evenly onto bottom of baking dish. Remove seeds if desired.
4. Top chiles evenly with cooked sausage. Then top evenly with shredded cheese.
5. In a medium bowl, add remaining ingredients. Whisk to combine. Pour over cheese.
6. Bake for 30-35 minutes, or until knife inserted comes out clean. Let set for 5 minutes before cutting and serving.
