This keto broccoli bacon salad is amazingly delicious! It’s the perfect side dish for barbecues, parties, and potlucks!
You’ll make any meal special when you add this keto broccoli bacon salad to it! It’s filled with delicious ingredients which are combined with a creamy and flavorful homemade dressing. This is a classic salad which I hope you’ll love as much as we do!
Let’s talk about our salad ingredients!
For this salad, we combine broccoli, bacon, cheddar cheese, red onion, and sunflower seeds. Yum! Using 1½ pounds of broccoli, I ended up with about 8 cups of chopped broccoli. I used regular bacon, but you can use regular or thick cut bacon for this salad. Mild, medium, or sharp cheddar all work great for this salad, as would colby, colby jack, and Monterey jack cheese. I think the red onion adds great flavor and color to this salad. I just tossed mine in the salad after dicing it. If you’d like to take a little of the bite out of your onion, you can dice it and soak it water for about 5 minutes. Then drain and add it to your salad. For your sunflower seeds, you can use raw unsalted seeds, or you can use roasted sunflower seeds, either salted or unsalted.
How do I make the dressing for this keto broccoli bacon salad?
The dressing for this salad is a creamy dressing that comes together quickly and easily. It’s also amazingly delicious! The creamy base for our dressing is a combination of keto mayonnaise and sour cream. I used the Chosen Foods brand avocado oil for my mayonnaise. When buying mayonnaise, you’ll want to read the nutritional labels to make sure there is no added sugar or oils which you don’t want. We then add apple cider vinegar to give our dressing a touch of acidity, and we add keto granulated sugar to balance out our flavors. The only other ingredients for our dressing are salt and pepper. After tossing the dressing with the salad ingredients, if time allows, I recommend refrigerating the salad for 1-2 hours before serving. This is a great salad to make ahead of time, and then let refrigerate overnight before serving.
