You can make this using either a large sheet pan or a large baking dish. I used a baking dish. Whatever you use, just make sure the salmon will fit in a single layer. I used heavy duty aluminum foil to ensure that it held together. It’s also important to use a large enough piece of foil to be able to bring the sides up around the salmon and pinch to seal. If you can’t pinch to seal the foil, you could place a second piece on top and use it to make a nice seal.

Ingredients
- 3 pounds salmon
- 2 teaspoons lemon pepper seasoning
- ¼ cup brown sugar substitute (Swerve)
- ¼ cup tamari
- 2 tablespoons butter, melted
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- 2 garlic cloves, minced
Instructions
1. Pre-heat oven to 375 degrees.
2. Line a large baking sheet or baking pan with aluminum foil.
3. Place the salmon, skin side down, on the aluminum foil. Season salmon with lemon pepper seasoning, pressing it slightly into the salmon. Fold up the sides of the aluminum foil around salmon.
4. In a small mixing bowl, combine remaining ingredients. Stir to combine.
5. Pour glaze over salmon. Wrap completely in foil, pinching together to seal.
6. Bake for 25 minutes or until salmon is cooked through and flakes easily.
7. Remove salmon from oven and set aside. Turn on broiler.
8. Unfold aluminum foil. Spoon glaze over salmon to baste.
9. Broil salmon, approximately 6 inches from heat, for 3-4 minutes or until glaze is caramelized.
