Depending on the kind of ham you use and depending on the size, cooking times will vary. I recommend checking the ham packaging and following the instructions for how long your ham will take, in minutes per pound, to heat up.

The glaze for this ham comes together quickly and easily. I recommend glazing your ham during the last 20-30 minutes of baking. This will ensure your glaze will nicely caramelize but won’t burn. We combine keto brown sugar, apple cider vinegar, Dijon mustard, prepared horseradish, cinnamon, and nutmeg to make this glaze. I used the Swerve brand for my brown sugar. It contains zero calories and zero net carbs, and it’s delicious! For the horseradish, you’ll want to use prepared horseradish but not the creamy type. This is basically horseradish root with some added salt and vinegar. You can use your favorite brand or use fresh horseradish root and make homemade. After pouring or brushing the glaze evenly over your ham, you’ll want to cook the ham uncovered until it reaches 140 degrees. You can baste the ham once or twice during this time if you’d like.

Keto Brown Sugar Mustard Blazed Ham

Ingredients
- 8-11 pound bone-in fully cooked ham
- 1 cup brown sugar substitute (Swerve)
- ¼ cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon prepared horseradish
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
Instructions
1. Pre-heat oven to 325 degrees.
2. Place ham, cut side down, in a 13x9 inch baking pan. Cover tightly with foil.
3. Bake until ham reaches 130 degrees.
4. To make sauce, in a medium saucepan, over medium high heat, add remaining ingredients.
5. Whisk to combine. Cook until sugar dissolves, whisking frequently, 3-5 minutes.
6. Once ham reaches 130 degrees, remove from oven. Drain drippings from ham. Remove fat from ham.
7. Using a sharp knife, score ham diagonally. Then score in the opposite direction creating a criss cross pattern.
8. Pour glaze evenly over ham. Bake, uncovered, until ham reaches 140 degrees, 20-30 minutes. Baste once or twice if desired.
