Let’s talk about Brussels sprouts!
Fun fact for the day! Although Brussels sprouts likely originated in Rome, they were later cultivated near Brussels, Belgium. They became very popular, and this is how they obtained their name! Brussels sprouts are a super keto food choice. They are a low calorie, low fat, and low carb vegetable. One cup of Brussels sprouts contains under 5 net grams of carbs. Nutrition wise, Brussels sprouts provide us with a source of calcium, folate, fiber, and vitamins A, C, and K. Another great thing about Brussels sprouts is that they can be eaten raw or cooked. Raw, they are amazing in salads and in slaws such as this one. But they can also be boiled, grilled, roasted, sauteed, or steamed. Two of our favorite keto cooked Brussel sprouts dishes are maple Dijon roasted Brussels sprouts and bacon balsamic Brussels sprouts.
What other ingredients go into this keto Brussels sprouts cabbage slaw?
To our Brussels sprouts, we add both green and red cabbage. This combination brings amazing color and flavor to our slaw. If you’d like, you can use all green or all red cabbage for your slaw. You can either thinly slice or chop your cabbage into whatever sized pieces you’d like. We then add diced red peppers and diced onion. This gives our slaw a nice crunchy element and adds great flavor. The red pepper brings a nice slightly sweet element, but you could substitute with any color bell pepper you’d like. For your onion, you can use yellow, red, or white for this slaw. You could even use a shallot or a green onion if you’d prefer. All of our vegetables combine to create a delicious and pretty slaw!
How do I make the dressing for this keto Brussels sprouts cabbage slaw?
The dressing for this slaw is a creamy coleslaw dressing that comes together quickly and easily and is absolutely delicious. It’s a basic dressing that would work great for any coleslaw dish. We start with a combination of keto mayo and sour cream. I used the Chosen Foods brand avocado oil mayonnaise for my slaw dressing. When buying mayo, you’ll want to make sure there are no added sugar or other ingredients you don’t want. We then add apple cider vinegar, keto sugar, celery seeds, salt, and pepper to bring the perfect balance of flavors to our dressing. The vinegar brings an amazing acidic quality to our dressing and the sugar adds the perfect amount of subtle sweetness. I suggest you give your slaw a taste and add more salt and pepper if desired.
