Let’s talk chicken!
I used cooked and chopped chicken breast for my chicken salad. I either boil or bake my chicken breasts and chop them while they’re still warm. Then they can simply be stored, in a covered container, in the refrigerator and they’ll be ready for recipes such as this! Shredded or cubed cooked chicken work great for this dish. You can use light or dark meat or a combination of both if you’d prefer. Using rotisserie chicken is a great and quick option as well. Just a little celery gives this salad a nice crunch; and what would buffalo chicken be without celery?😉
How do I make the dressing for this keto buffalo chicken salad?
I love the flavors that come about with the combination of mayonnaise and sour cream for this chicken salad. I prefer Chosen Foods avocado oil mayonnaise, but you can use any keto mayonnaise you’d like. We’re fans of Frank’s Red Hot Buffalo Wings Sauce. You can substitute Frank’s Original Red Hot Sauce or your favorite hot sauce in its place. A little apple cider vinegar, Dijon mustard, and smoked paprika help to create a great depth of flavor in this chicken salad. If you’d like, you can add some blue cheese crumbles to your buffalo chicken salad or you can use blue cheese crumbles as an optional topping.
How can I serve this keto buffalo chicken salad?
You have numerous keto options for serving this salad. It is great served in a bowl as is! You can serve this chicken salad atop your favorite lettuce or in your favorite green salad. Add some tomatoes, olives, or even hard-boiled eggs to make your perfect salad! This chicken salad can be served as an appetizer dip. Some suggestions for keto dippers include low carb veggies, keto crackers, cheese whisps, or pork rinds. How about making a beautiful appetizer by topping cucumber slices with this chicken salad! Another great way to serve this buffalo chicken salad is in a sandwich using either lettuce to make a lettuce wrap or by using your favorite keto bread.
