Let’s talk about our eggs!
Eggs are such an awesome food and a perfect keto choice! They’re low in calories and carbs, yet they’re amazingly rich in nutrients. Eggs are also a great source of protein and good fat. One of the great things about eggs is the many ways you can prepare and use them. For this dish, we’re using hard boiled eggs. But eggs can also be baked, boiled, fried, poached, or scrambled. And when baking, frying, or boiling, you can choose the exact doneness you’d prefer for your eggs. To incorporate eggs into your day, you can eat them just as they are or can use them to make egg casseroles, frittatas, omelets, quiches, and scrambles. They can also be added to main dish casseroles, salads, sandwiches, and stir fry dishes. For this egg salad, after peeling and chopping our hard boiled eggs, we add some diced celery.
How do I make the dressing for this keto Buffalo ranch egg salad?
The dressing for this egg salad is incredibly easy to make and is incredibly creamy and delicious. Mayonnaise is the base for our dressing and is what makes it nice and creamy. When choosing mayonnaise, you’ll want to make sure there is no added sugar or oils you don’t want. We then add crumbled blue cheese. I prefer to buy a wedge of blue cheese and crumble it myself. This way you can be assured there are no unwanted added ingredients. For hot sauce, I added a couple of tablespoons of Frank’s Red Hot Wings Sauce. You can add even more if you’d like. You can also substitute with your favorite hot sauce and can make your egg salad as spicy as you want to! We then add some ranch dressing, Dijon mustard, dill pickle juice, salt, and pepper to complete our dressing.
What are some ways I can serve this keto Buffalo ranch egg salad?
You have some great low carb options for serving this egg salad. It’s a super option for lunch, brunch, dinner, or for a savory and filling snack. You can serve this egg salad just as it is. You can also serve it atop some lettuce for a pretty presentation. If you’d like a more traditional option, you can make an egg salad sandwich using keto bread, biscuits, English muffins, or chaffles. It’s also a great filling for lettuce wraps.
